Cream of Mushroom Soup | Restaurant style recipe

                                                            Last evening while walking back from grocery shopping, my hungry tummy roared so loudly that hubby decided to take me to the nearest restaurant. 😀 We ordered mushroom soup for a change from the regular snacks and it was the best decision taken ever. The soup was very simply made with humble flavors from onion and ginger. But it was so unbelievably delicious. Imagine this coming from someone who is not a great fan of mushrooms. I just loved it! And it was decided that we had to recreate this magic at home.

                                                           The only time I had tasted cream of mushroom soup before was when I had made it some years back referring some recipe online. But the combination of garlic and milk made the soup taste so bad that I did not muster courage to try it again. So this time, me and the husband recollected the flavors of the restaurant mushroom soup and imagine our happiness when it turned out exactly the same! It was too good to be true and only took around 15 mins to make it.

                                               So here’s sharing the easy peasy recipe with all of you. Do try it and you will definitely fall in love with this simple soup. RECIPE: {Serves 2}

5 to 6 Button mushrooms
1 small onion
1/2 inch Ginger
1 1/2 Cups Milk (+ 2 Tbsp more for corn flour paste)
1 Tbsp Fresh Cream
1 Tbsp Butter
2 tsp Corn flour
2 tsp Pepper powder
Salt to taste

1. Cut mushroom heads into thin slices and finely chop the stems. Also finely chop onion and ginger. Keep aside.
2. Heat butter in a saucepan and add finely chopped onion and ginger. Fry till onion turns translucent.

3. Add mushroom slices along with stems and saute continually till they change color to brown.

4. Now reduce flame and add milk. Increase the flame to medium and allow the milk to come to a boil.

5. Now make a paste of 2 Tbsp Milk and 2 tsp corn flour. The paste should be free of lumps. Add this along with salt and pepper to the soup. Mix well.

6. Add fresh cream and mix well.

Remove and serve hot. Garnish with coriander leaves to make it look pretty. Enjoy! 😀
