Whole wheat paniyaram (appo/unniappam) – A yummy healthy delicacy

I always loved “appos” made by my grandmother and the “unniappams” we used to get at temples as prasads… Never thought of making it at home…But after coming to Qatar where there are no temples, i had to fulfill my desire of eating it by making it myself… Thus came into existence these cute little things which can be enjoyed guilt free and be made easily with minimum ingredients.. You can also make these with whole wheat flour (chapathi flour) instead of whole wheat but the texture is better with the latter..
Note: You will need a kuzhi paniyaram pan to prepare this.. Non stick works the best for me…You can get it at any Indian kitchenware store..

Health Benefits of Whole Wheat: Since they are low in fat and high on fiber, they have been linked to reduce weight, the risks of stroke, type 2 diabetes, certain cancers and other health problems..
Substitute refined flour with whole wheat in your diet and see the positive health changes you will undergo…

2 cups Whole Wheat grains
3- 4 Tbsp powdered jaggery
2 Tbsp fresh/frozen coconut (Optional)
1 tsp Cardamom powder
1 medium Banana (Optional but gives a nice flavor)
A pinch of salt
Some drops of oil for greasing the pan

1.Wash the grains well and soak it with sufficient water in a vessel for around an hour.

2.Remove water and wash it again.. Put it in a blender along with the jaggery, coconut and pinch of salt.

3.Grind it coarsely such that the grains are mashed well but u can feel it with your fingers..Don’t grind smoothly… The batter should be thicker than dosa batter but should fall easily from the spoon.. Do not over grind or you will end up with a gooey batter…

4.Chop bananas into small pieces and add to the batter along with cardamom powder…Mix well..

5.Heat the paniyaram pan fully and then reduce the flame to medium… Add a drop of oil into each of the holes…
6.Add the batter into the holes carefully using a spoon..

7.Cover and cook for around 5 mins on a medium flame till you see the top surface cooked….

8.Slowly flip the paniyaram in the hole by clearing the edges and turning it over one by one…
9.Cook for around 2 mins till the bottom surface starts browning..

10.Remove them one by one slowly and serve them hot… Enjoyy!!

Note: For all those of you who want to use whole wheat flour instead of grains, just mix together the flour, coconut, jaggery and salt with some water to form a thick batter and start following the recipe from step number 4.. It will surely taste yummy too…..
