Simple Vegetable Pasta | Quick Meal Idea

Welcome to my “newly found” easy meal recipe… When you don’t have the post lunch leftovers and are too lazy to cook elaborately for the dinner but still longing for something homemade, here is a filling and healthy recipe for you… Now why did i call a simple recipe such as pasta to be “newly found”?? That is because i am married to a guy who hates noodles and pasta… Can you imagine that?? 🙁

                     But, there is a happy twist in the tale… Last month when i went shopping with a friend, i picked these “Pipe Doppia Rigatura” pasta {I actually googled for the name!}just out of the blue… Made it using my own crazy lil recipe for his midnight after work snack and he just loved it!! Not only that, Can you believe my luck when he just requested it to be made again n again n again….. I was so happy…. 🙂

Now how could i not share this happy news with all of you.. So made it again last day with my same lil recipe {Did not want to experiment and make him hate it again..} just to click and add… Hope this recipe will be helpful for at least some of you who are yet to try this amazing dish… This is just one of the many variations you could try with pasta… Go crazy and mix and match flavors which your family loves.. 1 Cup Whole Wheat Pasta {Any variety you like!}
1/2 Cup Mixed Vegetables {I used capsicum,carrots,corn and peas}
1/2 Tbsp Oil
3 cloves of Garlic
1 Onion
1/2 Tbsp Tomato ketchup
1 tsp Green chilly Sauce
1/2 tsp Soya sauce
1/2 tsp Pepper Powder
Salt to taste

Sliced black olives and grated cheese for topping to taste

1. Cook Pasta as per packet instructions {with little salt and 1/4 tsp Oil}

2. Drain and run cold water over it to stop further cooking and keep it aside..

3. Heat oil in a frying pan and add chopped garlic.. Fry till brown…

4. Add sliced onions and fry till they turn translucent..

5. Toss in all the veggies, sprinkle little salt and continue stir frying they are cooked slightly without losing the crunch..

6. Add in the ketchup,green chilly and soya sauce,pepper and mix well till the veggies are coated with the sauce…

7. Add in the cooked pasta and mix well… Do a taste test and check for salt and pepper.. Add more if required..

8. Remove and serve hot topped with olives and grated cheese of your choice….
