Simple Tri Colour Upkari/ Mixed Veg Stir fry

Happy Independence day to all my readers!!

I guess i have to click step by step pictures of whatever i cook now.. I was down with cold since two days and decided to cook a simple meal of mixed veg stir fry along with boiled rice gruel and pickle for a comforting lunch.. Just while i was chopping the veggies, i noticed i was using the veggies with the colors of the Indian flag in my stir fry.. Even though making this as a new addition to my blog was far from my thoughts, i decided to click a final picture so that i could upload in a food group in Facebook which had Independence day theme the next day..

            With all these thoughts, i went ahead and clicked pics of this simple stir fry… While i uploaded it in the group, it suddenly occurred to me that i can add to my blog too.. Why not? Its simple, easy to make and very healthy too… So, here i am, half sleepy due to the stupid cold that im down with (Had never thought i would get cold in this super hot country!! Sigh!) but super excited that i have realized i could write this much even in this condition (lol!)..

Even though i have not clicked step by step pictures this time, i hope they will not be needed as this is quite a simple recipe.. I have used capsicum, beans, carrot and potato but you can use a combination of any veggies you like.. This stir fry is not a side dish for a sick person (Don’t misunderstand reading my story! ;)).. My husband as fit as he is, loves this dish any time and does not even mind the potatoes in it (which he hates otherwise!)..

RECIPE:

Ingredients:
1 Large Capsicum
1 Carrot
6-8 Beans
1 Potato

For the seasoning:
1/2 Tbsp Oil
1 tsp Mustard seeds
1 tsp Urad Dal/Skinned split black gram
Curry leaves to taste
3 Green Chillies
2 Red Chillies

Salt to taste

Recipe:
1.Wash well and finely Chop all the veggies and keep aside..
2.Heat a pan with oil and splutter mustard seeds..
3.Add urad dal, curry leaves, finely chopped green chillies and red chillies and fry for few seconds..
4.Add the chopped veggies and salt and mix well..
5.Cover and cook for 5 -10 minutes or till the vegetables are cooked..
Note: Sprinkle water in between if necessary..
6.Remove from flame and serve hot with rice meal..
