Paneer is our all time favorite but i like to keep it for special occasions… Some favorites are best eaten occasionally and this is one of them.. So while deciding the menu for my hubbys birthday lunch, shahi paneer had to be on the list being his favorite.. I had a double benefit of clicking pictures for my blog too.. Nowadays i cook only keeping my blog in mind… The little unhealthy side of me is long forgotten much to the dismay of my “not so health conscious” husband (Haha!)..
This recipe is a combination of many tried and tasted versions.. I have made it healthy by substituting Almonds for cashews and low fat milk for cream (and of course no butter!).. But no compromise has been made on the taste, i can guarantee you that… Just follow this recipe exactly and i am sure you won’t regret trying it..

1 Cup Paneer/Cottage cheese cubes (If using frozen, soak in hot water for half an hour)
3 cloves of Garlic
1 inch piece of Ginger
1 Tbsp Red Chilli Powder
1/2 Tbsp Coriander Powder
1/2 Tbsp Garam Masala Powder
1/2 tsp Turmeric Powder
8-10 Almonds (Soaked in hot water for an hour and skin peeled off)
1/4 Cup Low Fat Milk
2 tsp Cumin seeds
1 Tbsp Oil (1/2 +1/2)
Salt to taste
Coriander leaves for garnish
1. Heat 1/2 Tbsp oil in a pan and add roughly chopped onion… Fry till it turns translucent..
2.Add ginger and garlic and fry till the raw smell goes away..
3.Add roughly chopped tomato and fry till it gets mashed slightly..
4.Add the turmeric, red chilli,coriander and garam masala powders and fry well..
5.Allow the mixture to cool..
6.Add peeled almonds and grind it with little water to a smooth puree..
7.Heat the rest 1/2 Tbsp oil and splutter cumin seeds..
8.Add the ground puree and fry well till the oil starts leaving the sides…
9.Add mik and salt and allow it to come to a boil..
Note: Adjust the consistency of the gravy as per your taste by adding more milk or water..
10.Add the Paneer pieces and mix well…Cook uncovered for 5 minutes..
11.Remove from flame and garnish with chopped coriander leaves..
Serve hot with rotis or rice!
