Shahi Masala Gobi [with freshly ground masala]

There are a lot of wonderful recipes waiting to be archived and i have been sitting there lazy to write.. Now that i am back in action since yesterday, i can’t wait to pen down my next recipe which is “Shahi Masala Gobi”.. This recipe was given to me by my friend, Sudha Rao who is a really great cook with years of experience.. Her experience shows in her easy recipe with a fresh masala paste which gives it its awesome flavor..

                 It had been days i had not bought cauliflower as i was bored making the same recipe with all the spice powders… That was the time i came across her recipe.. As i read it, i understood that this is going to be a hit here… The masala for the gravy was very unique combining many spices in a wonderful way… Could not wait to try it out..

Finally some days back (Im sorry i am this late to post!) i gave it a shot and it came out really well… I shallow fried the florets instead of deep frying (healthy healthy!) and added a little milk at the end instead of cream.. The spice paste in itself is so aromatic, i could not wait to dig into it… As soon as i was done, a big chunk of the masala gobi went straight into my mouth and i was like WOW!!

My hubby too loved it a lot and his expression as he took the first bite was worth watching… It was too yummy for words… I thank Sudha akka for her wonderful recipe again.. Do try this tasty recipe for a change and enjoy it with rotis or rice..

1 Medium sized Cauliflower/Gobi
A pinch of Turmeric powder  (To immerse the florets)
1 Tomato
1 Tbsp Milk
1/2 +1/2 Tbsp Oil
Salt to taste

For the spice paste:
1 Large Onion
3 Cloves of Garlic
1 inch piece of Ginger
1 tsp Fennel Seeds/Saunf
6-7 Peppercorns
2 Cloves
2 Cardamom Pods
1/2 inch Cinnamon Stick
5-6 Cashews
3-4 Red Chillies

1. Boil water in a vessel with salt and turmeric powder..

2. Add the florets and allow it to be immersed for 2 mins.. Now switch off the flame and cover & keep aside till use..

3. Make smooth paste using all the ingredients mentioned under “For the spice paste” using little water..

4.Heat 1/2 Tbsp Oil in a pan and add the florets (Drain the water before adding)…Shallow fry them till they are slightly browned..

5. Keep them aside..

6. Heat the rest 1/2 Tbsp oil and add the ground paste..

7. Fry till the oil leaves sides of the pan..

8. Add tomato and salt and mix well…

9. Add the shallow fried florets and mix well..

10. Cover and cook till the florets are cooked..

11. Add little milk and mix well..

12.Remove from flame and garnish with coriander leaves..
Serve hot with Rotis/Rice!

Note: I have made the gravy dry.. If you want a little more of the gravy, add little water after step 8, bring it to boil and continue with the rest of the recipe..
