“Ghosale upkari? Yuck!” was my reaction when ridge gourd stir fry was made at my home..Yes you guessed it right! Ridge gourd topped the list in my “Will never taste this veggie” list..As much as i hated the veggie, i loved the chutney made from its peels.. It was such an awesome chutney with a wonderful aroma..
Since to get the peels, i had to buy the gourd (which i hated!) , i never bought them at all (Can you believe it? lol! ).. All was well until one day, my dear husband (who loves to feed me anything i hate!) bought them when he had gone for a mini grocery shopping alone.. I was so very annoyed that day (Poor me!)..
After loads of pestering from him, i finally thought of giving it a try (If i did not like, there is always his plate to dump it! Lol!).. Anyways,got tips from my mom and went ahead with the stir fry.. I am actually embarrassed to admit but it actually tasted good.. It did not have any odd taste or anything.. Just a simple and yummy veggie it is (God knows why i hated it so much!).. That time i remembered how my grandma used to say, “How will you know whether it is good or bad without tasting it?”.. 100% true it is..
While making the stir fry, i was actually drooling thinking about the yummy chutney the peels were going to make.. Even though my mom had given me the recipe for the chutney, i thought of cross checking with the Jaya V Shenoy cookbook that i have.. I was amazed to find 2 recipes there.. One was with Coconut (same as my moms recipe) and the other was without it..
I decided to try the one without coconut as it seemed much simple and with loads of fresh ingredients.. My little trial session did not fail me and the chutney came out as yummy as the one my grandma used to make (No.. I am not exaggerating!).. Was so happy with myself.. Even my mom was amazed to find that ghosale chutney could be prepared without coconut too…
So enough of my chattering.. Had never thought i would say this but do buy ridge gourd and try out these yummy recipes..

2 Ridge Gourds/ Ghosale
2 Green Chillies
2 Tbsp Freshly grated Coconut
2 Red Chillies
Curry leaves to taste
1 Tbsp Jaggery
A pinch of Hing/ Asafoetida
1 tsp Mustard seeds
1 Tbsp Oil
Salt to taste
1.Wash and peel the ridge gourd..
Note: You can keep some skin on it if you want to add to the flavor..
2.Keep the peels aside safely for the chutney and chop the gourd into bite size pieces..
3.Heat oil in a kadai and splutter mustard seeds.. Add curry leaves..
4.Add green chillies and red chillies and fry well..
5.Add the chopped gourd pieces and salt and mix well..
6.Cover and cook for around 5 minutes..
Note: DO NOT add water… This veggie leaves loads of water…
7.Add jaggery and hing and cook uncovered for around 2 minutes..
8.Remove from flame and garnish with grated coconut..
Serve hot with rice!
Ridge gourd peels (obtained from 2 of the gourds)
3 cloves of garlic
1 inch piece of Ginger
3 Green chillies
A handful of Coriander leaves
1 tsp Cumin seeds/ Jeera
1 Tbsp Grated Jaggery
1/2 Tbsp Oil
Salt to taste
1.Chop the peels into small pieces and wash them well to remove any dirt..
3.Add the ridge gourd peels and fry them on medium flame until they are cooked..
4.Meanwhile chop the ginger, garlic,green chillies and coriander leaves as shown..
5.Add the chopped ingredients to the fried peels and continue frying till the raw smell from them goes..
6.Allow them to cool..
7.Blend the above stir fried mixture along with some water to a smooth paste..
8.Add jaggery and salt and blend for half a minute more..
Serve as a side dish along with rice or with dosas, idlis or even with rotis!
