Ragi Urad Dosai | Finger millet Dosa

Nowadays my “new dosa recipes” hunting time is equal to zero, all thanks to my Asha mais cookbook “The Konkani Saraswat Cookbook”… Whenever i feel like trying out some new dosas, i open her book and never fail to find an interesting healthy option within 5 mins… After a hit Sabudana Dosa recipe, which my mom has given the “Best Dosa Ever” Award and she makes it every week, here i am with one more amazing and delicious recipe of Ragi Dosa… This dosa is the best way to include this healthy grain in the yummiest way possible..

                       My first recipe with ragi which also happens to be my first recipe is this blog is a super healthy, instant and delicious Ragi Malpua ..This recipe is and will always be very close to my heart.. My second experiment with ragi happens to be this Ragi Onion Dosa which i make very often as this can be made instantly too… Apart from these two recipes, i had only seen a ragi idli made by my aunt but never tried it {Planning to very soon!}… So, this ragi urad dosa came as a pleasant surprise to me.. The recipe was very easy and was a “No Rice” one which is very good for those who want to avoid rice in their diet..

And can you imagine my happiness when the dosa came out perfect?? The tiny pores in it showed how yummy it was going to taste.. Just could not wait to finish clicking… I know the pics are not that great because of my excitement to enjoy it as soon as i could but i guess the dosa itself explains its yumminess, right??

Health Benefits of Ragi:   Ragi is rich in Calcium , helps in weight loss, source of rich Fiber and helps lower cholesterol ,Good for diabetes patients and also has a cooling effect on the body..

1 Cup Urad Dal/ Skinned split black gram
3 Cups Ragi flour/ Finger millet flour
2 Green Chillies
1 tsp Jeera/Cumin seeds
Salt to taste

Oil to cook the dosa

1. Wash well and soak urad dal for 4 hours…Grind it in a mixer to a fine paste… Pour into a large bowl adding salt..

2. Keep it to ferment in a warm place for 8 hours or overnight…

3. While preparing dosas, take ragi flour in another bowl and add water to make a batter free from lumps of easy pouring consistency..

4. Mix it with the urad dal batter and add green chillies and jeera… Mix well..

5. Heat a pan and reduce the flame to medium… Pour a ladle of batter in the center of the pan..Tilt the pan to give it a round shape..
Note: Do NOT try to spread with the back of the ladle like normal dosas.. Just tilt the pan for the shape..

6. Cover and cook till the top surface looks cooked.. Takes around half a minute..

7. Pour little oil on the sides of the dosa.. Slowly loosen the sides of the dosa and flip..Cook for another half a minute..

8. Remove from pan and serve hot with any chutney of your choice!
