Quick Tomato Pulao


                                                      Noticed the plump and gorgeous tomatoes in the pic?? These are homegrown by my South African neighbor, Florence and now i have tomatoes and more tomatoes in my fridge {I am saving her space! lol.. 😉 }.. But seriously, Florence is really a wonderful neighbor and a dear friend.. I love our little chat sessions while watering plants and not to mention her kitchen garden produce which she happily shares with me.. During the winter months, i just stop buying tomatoes altogether.. 
                                                        Even though i am the happiest when the first batch arrives, as she brings more and more of them, i am alarmed.. I do share them with my dear ones here {Good girl me!} and make Tomato Rice with freshly ground masala but when there are plenty more of them, searching new recipes becomes a necessity.. This time, an idea clicked to search in the cookbooks i have.. Turned lucky and found [again!] a tomato rice recipe and made it instantly.. Actually it so happened that i just read the ingredients and overlooked the recipe.. The actual recipe is slightly different from this one as it uses chopped tomatoes and cooked rice.. But as they say, All’s well that ends well… We just loved this pulao and that is all that matters! 

                                                         
                                                                I made it for my hubby’s lunch box and he has asked me to make them again {which is rare nowadays as he wants me to try new recipes every time “For the Blog”! ;)}.. Don’t know if it is the recipe or the amazing flavors of organic tomatoes {or because they are freebies! ;)}.. Anyhow i am making them again.. You try this quick recipe too and enjoy the delicate flavors of tomato pulao.. Happy and Healthy Cooking!!

RECIPE:

Inspired from the book: “Rice, Raita and Rasam” by Jayashree Prabhu

Ingredients: {Serves 2}
1 Cup Basmati Rice
2 large Tomatoes, pureed*
1 large Onion
3 Garlic cloves
1/2 inch Ginger piece
1/2 Tbsp Red chilli powder
1/2 tsp Turmeric powder
1 Tbsp Oil
1 tsp Cumin seeds/ Jeera
Salt to taste
4- 5 sprigs of Coriander leaves

*Roughly chop the tomatoes,remove seeds and blend in a mixer..

Recipe:
1. Wash well and soak the rice for 15 mins.. Drain water and keep aside..
2. Heat oil in a pressure cooker and add cumin seeds.. Allow it to change color..
3. Add thinly sliced onion and fry till translucent..

4. Add minced ginger and garlic.. Fry till the raw smell goes away..

5. Add red chilli powder and turmeric powder.. Fry well on medium flame..

6. Pour in the tomato puree.. Mix well..

7. Allow it to simmer till the raw smell of tomatoes goes away..

8. Add rice and salt.. Mix well..
9. Add hot water to the level of the rice and just a little more..
Note: Don’t add more water as this will lead to mushy rice after cooking..

10. Pressure cook for 4 whistles on high or how you normally cook rice..
11. Allow the pressure to release by itself and remove the cover..

12. Mix lightly such that the rice does not break.. Garnish with finely chopped coriander leaves..

Serve hot with raita or any side dish of your choice!
