Hot spicy, tangy soup anyone? Just made this yummy tomato soup last night and craved for a huge family with whom i could share the soup.. Soup drinking (or rather slurping!) at my place used to be a family affair where me, my mom,dad, bro,grandpa and grandma used to sit together and enjoy the simple but delicious soup chatting in between the slurps.. Wow! Those were fun times.. Even at my hubby’s place where we are a big family, special dishes are always eaten together sitting in the kitchen pulling each others’ leg (mostly mine!)..
Tomato soup was one of the recipes i wanted to add to my blog since long but it just did not click and it took me this long.. Anyways, better late than never..So here i am.. I found this recipe just by chance when i was searching for something else and the simplicity of this recipe attracted me so much that i instantly bookmarked it.. I also saw a sanjeev kapoor video of tomato soup and loved it too.. So was in total confusion as to play safe and try the sanjeev kapoor version which had butter,cream,corn flour and a long list of ingredients or try this simple “oil free” recipe which she had got from an ayurvedic retreat..
Finally last night, my lazy brain gave me an answer.. Easy recipe it was then! I started with the soup preparation and before i knew the kitchen was filled with this wonderful aroma of piping hot soup… Oh my! Wasn’t i pleased with myself… A sip into the soup and i knew it was the best soup i had ever made.. My husband too gave many compliments and even drank two bowls of it.. *Mission accomplished*
This soup is also dedicated to my college mate Roshan who had been requesting me for this recipe.. He being a bachelor wanted a easy recipe to try at home.. I guarantee you Roshan that once you try this one, you won’t buy the instant powder soup packets…

2 Large Tomatoes
1/2 a large Onion
1/4 a medium Carrot
3 cloves of Garlic
1 inch piece of Ginger
5-6 sprigs of Coriander leaves (Root too if you have!)
Pepper to taste
Salt to taste
Coriander leaves for garnish
1. Roughly chop all the veggies as shown..
2. Heat approx 2 cups of water in a deep pot and add all the veggies in it..
3. Cook till the tomatoes turn soft.. This might take 6-8 mins..
4. Allow it to cool down a little..
5. Strain the mixture.. Save the liquid.. DO NOT discard it..
6. Puree the boiled veggies with little cold water in a mixer to a smooth paste..
7. Strain this paste using a pestle or a spoon so that all the liquid comes out well..
Note: Strain this in the same vessel with the liquid from step 5..
8. Bring the liquid to a boil…
9. Add salt and pepper and boil till it reaches desired consistency… Took around 3 mins for me..
10.Remove from flame, garnish with coriander leaves and serve hot with whole wheat croutons/bread sticks..
