Quick Meal Idea | 1

I had been thinking of starting a column for quick and easy meal ideas since i started this blog but it took me 102 posts to finally kick start this one… But as they say, its better late than never… So here i am with the first combo…. The meal i prepared was actually for a theme in my favorite food group in fb, KKAJ where we had to post a pic of a meal we would prepare if we had unexpected guests at home…. Although if such a thing happens in real life, i would go fully blank, this theme helped me think in case such a situation does occur.. Now at least i have a meal idea jotted down which i know i could do in half an hour to an hour depending on the number of guests.. Thanks a tonne KKAJ for the awesome theme and especially my friend in the group Sumathi for coming up with this theme idea!

                                     Regarding this meal which i planned and made, it is really an easy and quick meal but very tasty too… It included :
            Rice, Lemon Rasam, Cabbage Upkari [Stir fry], Moong Dal Kosambari
which took me approximately half an hour to prepare and
            Mixed Vegetable Pickle, Papad and Halwa which are my treasures from my vacation to India!
                                      I know pickle, papad and curd would be easily available at most homes 24*7…. So i would like to share the recipes of the rasam,upkari and kosambari with all of you! I will also share some recipes of desserts which can be easily made in 15-20 mins time for your guests and leave them amazed!

Lemon Rasam

Thanks to Shyamala Kini for the easy and yummy recipe!

2 Tomatoes
1 tsp Turmeric Powder
Salt to taste
1/2 a Lemon
3 Garlic cloves
8-10 Peppercorns
1 tsp Cumin seeds
Coriander Leaves for garnish

1. Chop the tomatoes roughly and boil in little water along with turmeric powder..
2. Meanwhile roughly crush garlic cloves,peppercorns and cumin seeds either using mixer or mortar-pestle..
3. Add this and salt to the boiling tomatoes and boil for some more time..
4. Switch off the flame and add lemon juice…
5. Garnish with coriander leaves..
Note: Seasoning is optional!

Cabbage Upkari

1/2 a medium Cabbage
1/2 Tbsp Oil
1 tsp Mustard seeds
1 tsp Cumin seeds
A sprig of Curry Leaves
3 Green Chillies
Salt to Taste
2 Tbsp Coconut
1 tsp Turmeric Powder

1. Chop the cabbage finely, wash well and keep aside..
2. Heat a pan with oil and splutter mustard seeds..
3. Add cumin seeds, curry leaves and green chillies one after another.. Fry for some time..
4. Add chopped cabbage and mix well.. Add salt.. Cover and cook for 5 mins..
5. Mix coconut and turmeric powder with hands and add to the cooked cabbage.. Mix well..
6.Remove from flame..

Moong Dal Cucumber Kosambari

1/4 Cup Moong Dal/ Skinned Green gram
2 medium sized Cucumbers
3 Green Chillies
Salt to taste
Coriander leaves and freshly grated coconut for Garnish

1. Wash well and Soak the moong dal in water for atleast 15 mins..
2. Chop cucumbers,green chillies and add to the soaked moong dal..
3. Add salt and mix well..
4. Garnish with desired amount of coriander leaves and coconut and mix well..
Serve fresh and crisp!!

Another variation for kosambari would be Khamang Kakdi ,Tempered crunchy cucumber salad..

For the Desserts, You can try the following options:

1. Jaggery Sheera – A very easy to make, quick and yummy semolina pudding recipe!
2. Aval Payasam – A super quick and super tasty recipe of beaten rice cooked in milk and jaggery!
3. Coconut Burfi – A delicious and easy sweet you can make even a week before and keep!

You could also serve the Coconut Burfi with Ice Cream like i have served here! Sinful Indulgence! 🙂
