Punjabi Rajma [with Freshly Ground Masala]

I just love Punjabi cuisine.. Punjabi dishes have a very appealing look and a delicious taste in them which makes me crave for them often.. But along with the finger licking flavor, there are many hidden calories too which can be comfortably avoided when home made.. So here is one such dish which will make you forget the dhabe waala swaad for sure..

          Dhaba reminds me of the yummy food we had from Chandigarh which was one of the best i had ever tasted.. Can never forget their Rajma Masala… After that, i have, on several occasions tried to recreate that taste but without any success.. I knew it was due to the special masala they add which can never be substituted with the store bought powders i add in my gravy.. After searching for months, I finally found this amazing recipe from Monsoon Spice and i am so very grateful to her..

This is a easy,healthy, no powder recipe with freshly ground masala which has an amazing flavor which can definitely give competition to the dhaba one i was drooling over.. The catch of this recipe is that no butter is required but still no compromise is made on the taste part.. You will just keep licking your fingers for sure (Haha! Experience Speaks!)..

As Rajma Chawal (Kidney beans with rice) is the heaven made combo, take care not to break it (Lol!) but rotis definitely can be added into the menu to make it a true Dhaba style.. Balle Balle!

RECIPE:

Ingredients:

1 Cup Rajma/Kidney Beans
1 Large Onion
2 Tomatoes [Pureed]
3 cloves of Garlic
1 inch piece of Ginger
1 tsp Kasuri Methi
1 inch Cinnamon Stick
3 Cloves
1 Tbsp Cumin seeds/Jeera
1/2 Tbsp Coriander seeds
5-6 Red Chillies
1/2 + 1/2 Tbsp Oil
Salt to taste

Recipe:
1. Wash well and soak the kidney beans overnight or for at least 6 hours..

2. Drain the water and Pressure cook it for around 5-6 whistles (or till soft) with water enough to soak the beans only..Keep aside..

3.Heat a pan with 1/2 Tbsp oil and add the cinnamon, cloves,cumin seeds and coriander seeds..Fry well till they change colour..

4.Add red chillies and roughly chopped onion and fry till the onion turns translucent..

5.Add roughly chopped ginger and garlic & fry well for 2 more minutes..

6.Allow it to cool..
7.Grind it along with water to a smooth paste..

8.Heat the rest 1/2 Tbsp Oil and add this ground paste..Fry well for 2 minutes..

9.Add kasuri methi and fry again for 2 more minutes..

10.Add tomato puree and fry till the oil leaves sides..

11.Add salt and mix well..

12.Add the cooked kidney beans and mix well..Adjust the gravy consistency and check the salt..

13.Remove from flame and serve hot with Rice or Rotis…
