Pomegranate Sorbet | Sugar free


                                                   Yeah! Its a special day today as i share this recipe.. Our 3rd Wedding Anniversary! Can’t believe its 3 already.. Still remember our first meet just 10 days prior to our wedding.. Lol.. Can you imagine that?? Yes.. Our marriage was fixed just by exchange of pics and some heart to heart conversation over phone.. And with that we decided that Mitha and Arun were made for each other.. How true was that, i realize now.. These 3 years have been the best years of my life!

And how happy i am to share my hubby’s “sorbetto” on our special day.. If you are wondering what “sorbetto” is, it is the way he calls the frozen dessert, Sorbet.. I had found this during my search for international dessert recipes and had looked over more than a 100 recipes for the perfect one.. Finally this is what i came up with after mix matching all the ideas of a sugar free sorbet..

Do read the steps and notes carefully before trying so as to avoid any mistakes.. This dessert is one of the easiest if you get the idea properly.. And the taste, i can definitely call this a healthier sibling of Ice cream.. So if you are an Ice cream lover, then this one is definitely for you! Do try! Happy and Healthy Cooking!!

RECIPE:

Ingredients:
2 Cups Pomegranate seeds/ 2 Pomegranates
1 Cup Water
1/4 Cup Honey
Some Pomegranate seeds for garnish

Recipe:
1. Add the seeds in a blender and pour in 1 Cup Water.. Add honey.. Blender for few seconds..

2. Sieve the mix to extract the juice..

3. Pour the juice in a freezer safe deep dish..

4. Freeze for 2 hours..
Note: Keep the freezer temperature between medium and high till step 8…
5. Remove and using a fork, break the frozen juice..

6. Blend to a smooth puree..

7. Freeze again.. Now repeat steps 5 and 6 every half an hour or so for 4 more times..

Step 5: 2nd Time!
Step 6: 2nd Time!
Off to Freeze: 2nd Time!
5th Time! Check the change in texture.. More soft and fluffy!

8. Finally freeze the mix for 6 hours at a stretch.. {Reduce the freezer temperature to medium/normal as high cooling can solidify the mixture..}

9. Scoop using a ice cream scoop and serve immediately in bowls garnished with pomegranate seeds..

Notes:
1. If you have an ice cream maker, just pour the juice in it and process according to the instructions of the maker..
2. Make sure you have a freezer safe and “fork proof” dish.. My first dish got a tiny hole due to the forking! 😀
3. Freezing and blending 5 times ensures  a smooth, soft and fluffy sorbet.. Almost equal to ice cream texture..
4. If the sorbet is watery even after freezing for 6 hours, freeze longer..
5. If the mixture gets solidified {ice like} after freezing for 6 hours, just fork and blend once again & freeze for half an hour more.. Serve!
6. Freeze the serving bowls for an hour such that the sorbet does not melt as you enjoy..
7. Try this with Mangoes as in my Mango Granita recipe… Instead of forking every 2 hours, blend them like in this recipe and you get Mango Sorbet..
