Paneer Butter Masala

 
                           I am on seventh heaven today! The reason being a wonderful feedback from one of my fb friend for my Eggless Microwave Plum Cake … She says, “Mitha,Thank u thank u thank u sooo much… This cake was super easy and super fast and super delicious!!! I just gave this recipe to my 10 yr old daughter to experiment and it turned out to be such a hit.. She is just flying in the air as everyone appreciated what she made!! It was wiped off the plate in just few seconds.. The fast the recipe, even faster it disappeared off the plates.. You could name this as dhoom 3 cake.. ”   Now, Did i need anything more to rejoice?? Yes i needed some creamy and heavenly Paneer Butter Masala with some soft rotis {Lol!}…
 

                         Seriously, i have never been so much overwhelmed with anyone’s feedback… I could just feel the little chef’s happiness when the cake must have disappeared off the plates and all the appreciation she got.. Truly Hats off to her!! I don’t remember entering the kitchen at the age of 20, leave 10.. haha…. 😉 

 
                         Anyways, today was a paneer butter masala with rotis day for us… My hubby was pestering me since long to make it and i was behind cleaning up my fridge which was filled with veggies and more veggies… So today being the day he takes his “Dinner box”to work, thought it was apt to treat him with his fav gravy…. 
 
                         This recipe is from a cook book of mine which has all authentic Punjabi dishes… Though i have tried diff variations of this famous side dish from various sites, i found this recipe to be the easiest and yummiest and definitely the healthiest… Even without a weeny bit of cream, the gravy turns out super creamy in texture and delicious in taste… We enjoyed it fully with rotis and my hubby was simply delighted…

RECIPE: {Serves 4}

Ingredients:
1 Cup Paneer cubes {If frozen, Immersed in warm water for 15 mins}
1 Large Onion , finely chopped
3 cloves of Garlic , grated
1/2 inch Ginger piece , grated
2 medium sized Tomatoes , finely chopped
1 Tbsp Tomato Ketchup/Sauce
1/2 Tbsp Red Chilli Powder/ to taste
1/2 Tbsp Garam Masala Powder
2 Tbsp Yogurt/Curd
1 Tbsp Milk
Salt to taste
1 tsp Oil + 1 Tbsp Butter
Coriander leaves finely chopped for garnish
* 1 tsp Cream for garnish is optional… I found the gravy creamy enough without it.. So did not add..

Recipe:
1. Whisk the yogurt well and let it come to room temperature {if using frozen}.. Keep it aside..

2. Heat oil in a pan and allow butter to melt in it…

3. Add finely chopped onions and grated ginger & garlic…. Fry till the onions turn slightly brown and the raw smell goes away..

4. Add tomatoes and cook on low flame for around 10 mins till it forms a thick gravy..
Note: Add 1 Tbsp water if necessary while the tomatoes are cooking..

5. Add salt,red chilli powder,garam masala powder,ketchup and whisked yogurt and mix well..

6. Add milk and 1 Tbsp water to adjust the gravy… Add Paneer cubes and simmer for 2 mins..

7. Remove and garnish with finely chopped coriander leaves…
Serve hot with soft rotis or rice and enjoy a heavenly Punjabi meal!!
