Mushroom Chettinad | Spicy Mushroom gravy


                                                           Last day i came across this delicious looking mushroom gravy posted by Usha mai {Our talented Admin of KKAJ} and quickly noted it as a “Must Must Try!!”.. With a mushroom packet lying fresh and white , i was a happy girl ( Can’t tolerate the taste when they turn even the slightest brown! Yuck!).. Chettinad gravy was something i always wanted to try and that post of hers had left the “inspiring imprint” on my brain.. So even though the recipe looked slightly time consuming, i decided to give it a try.. And what a fantastic decision that was! Apart from the compliments i got from my hubby, what made my day was something his lunch box buddy at work (A Punjabi) said to him.. My hubby could not stop smiling when he repeated his friend’s words “This curry tastes way better than chicken masala! Please ask bhabhiji to share the recipe..” Wow! I was literally jumping with joy!!

                                                          While have a lunch of this delicious gravy with rotis, i truly enjoyed the way all spices combined to give the bland mushrooms a spicy lift up.. Personally mushrooms are not my favorite but this curry just made me search for those chunks which had absorbed the gravy so well.. And the clicking part, it was a quick series of not-so-perfect shots as my tummy was rumbling with all the aroma.. Never click on empty stomach! A lesson well learnt!

                                                                 And it was not only me who tried and fell in love with this amazing recipe.. Most of my fb friends highly inspired by Usha mai could not resist cooking this deliciousness and they loved it very much too.. RECIPE:

Adapted fromPalakkad Chamayal

Ingredients:
8 to 10 Button Mushrooms, halved {Can be substituted with Potato, Cauliflower or Paneer}
2 medium sized Onions, finely chopped
2 Garlic cloves,minced
1 inch Ginger piece, minced
A sprig of Curry leaves
1/4 tsp Turmeric Powder
1 large Tomato, finely chopped
1/2 Tbsp Red chilli Powder/ to taste
1/2 tsp Sugar/ Jaggery
Salt to taste
1 Tbsp Oil

Coriander leaves for garnish

For the spice paste/ masala:
1 tsp Oil
1/2 Tbsp Coriander seeds/ Coriander Powder {I used powder}
1/2 tsp Cumin seeds/ Jeera
1 tsp Fennel seeds/Saunf
2 Cloves
1 inch Cinnamon stick
2 Cardamoms
6-7 Black peppercorns
2-3 dry Red Chillies
3 Tbsp freshly grated/ desiccated Coconut

6-7 Cashews {soaked in warm water for 10 mins}

Recipe:
1. Heat 1 tsp oil in a pan and add in the coriander seeds {If using powder, to be added along with coconut and not now}, cumin seeds,  fennel, cloves, cinnamon and cardamoms.. Fry for few seconds..

2. Add red chillies, peppercorns, coconut {and coriander powder}… Fry on medium flame till the coconut turns light brown and aromatic.. Transfer to a plate.. Allow it to cool..

3. Grind the spice mix along with the {soaked & drained} Cashews and little water to a smooth paste.. Keep aside..

4. Take the pan again and heat 1 Tbsp Oil… Add onions,ginger,garlic and Curry leaves.. Fry till the onions turn light brown..

5. Add turmeric powder and fry for few seconds.. Now add in tomatoes and fry till they turn mushy..

6. Add the spice paste and red chilli powder.. Fry continuously on MEDIUM flame for 3 to 4 minutes till everything mixes up well and forms a thick gravy..

7. Throw in the halved mushrooms along with salt & sugar and mix them well such that the gravy well coats the mushrooms..

8. Cover and cook on MEDIUM flame for 5 minutes or till the mushrooms are cooked..
Note: Mushrooms release a lot of water, so there is no need of adding water but if you feel the gravy is thicker to your liking, do add around 1/2 Cup water and cook without cover for 2 more minutes..

9. Remove from flame and garnish with coriander leaves..

Serve with rotis or rice…
