Some days, i do not have any plans of what i am going to cook for lunch till almost lunch time and there are some other days when i don’t have enough veggies to cook one particular vegetable curry.. So during those times, my only yummy option is Mixed vegetable curry.. Just toss in some leftover veggies and spice them up and lo! your lunch is ready…
When i am not lazy to cook, i make kurma which is mixed veggies cooked in coconut paste..But yesterday, i was in no mood to cook and wanted a simple curry with less hard work.. So after searching in my recipe books, i found this mixed veg curry recipe in one of them… It was an easy recipe which did not take much of my time and had an awesome flavor too..
I would suggest you to try this curry during one of your lazy days too (I hope all of you have had at least one such day.. or is it just me?? lol!)..
2 Cups Mixed Vegetables (I took carrot, potato, cauliflower and peas..You can add beans and paneer too..)
2 tsp Cumin seeds/Jeera
1 tsp Turmeric Powder
1 Tbsp Red Chilli Powder/to taste
1/2 Tbsp Coriander Powder
1/2 Tbsp Garam Masala Powder
Salt to taste
1/2 Tbsp Oil
Lemon juice (Optional)
Coriander leaves for garnish
1. Chop all the veggies into bite size pieces as shown and keep aside..
2.Heat oil in a kadai/ pan and splutter the cumin seeds..
3.Add the sliced onions and fry till they turn translucent..
4.Add the mixed veggies except peas (I cooked the peas separately) and mix well..Cover and cook for a minute..
5.Add salt,turmeric powder and some water..cover and cook for 5 minutes..
6.Add the red chilli,coriander and garam masala powders and mix well..
7.Add the tomato and cooked peas and mix well..Cover and cook for a minute more..
Note:If you want it dry, just cook uncovered for a minute till the water evaporates..
8. Remove from flame and add lemon juice and garish with coriander leaves..
Serve hot with rotis or rice..
