Microwave Til Ki Burfi {Using Jaggery}

All throughout making this dessert, my hubby was behind me humming “Murphy…”.. If you did not understand what i meant, you have definitely not watched the Ranbir movie Burfi!.. Ahh.. leave that.. Here i am back with one more dessert to celebrate the harvest festival of India, Makar Sankranti/ Pongal / Lohri…. Even though we need no reasons to indulge our sweet tooth, festive occasions do make it more special.. Btw, did you notice that the recipe is made in microwave?? Yes!! Easy, Instant and simply Delicious…. That defines this superb recipe… 🙂

                        Last week while i was wondering what would be my dessert to celebrate this festival, i had never thought i would finally get such an amazing recipe.. First of all, Sankranti for us meant making Moong Dal Sweet Khichdi and devouring it to hearts content…. But that was before my blog days… Now, even before me, my hubby starts searching for recipes to be added on special occasions… No.. This was not found by him.. Actually i was sitting late night last week and editing my pics while i felt like searching for some sankranti recipes.. I knew a lott of sesame seed recipes would come up as it is famous for sankranti in the south and i was not complaining as i had it stocked up since some months and wanted to use it up…

                        Finally after many rejections,{ha.. I sound like a Masterchef to reject recipes..}mainly because either they were too difficult ones with the sugar syrup string consistency checking and all or i found them quite similar to the khichdi i had already added… And when i was dejected to the lowest low and was simply searching with no hope, i found this easy recipe which had just 5 ingredients and all 5 were available with me.. Wasn’t i Excited!!!

5 Ingredients – 1 Delicious Burfi!

As easy the recipe sounded, it did not disappoint me at all…. I did not realize how quick it got over and there i was licking the mixture even before it got set {After all who can resist the heavenly smell of dessert mixtures and why waste the leftovers in the bowls and spatula?? ;)} The cooling time was the hardest and the most difficult time for me {infact both of us}.. He kept asking me “Murphy ready??” and i would give a “Sad Smiley” look..

Finally, after what seemed like ages, the mixture got set and after i took a few clicks, my hubby took a bite into the burfi and the expression on his face was worth all the efforts… He said “Wow!! This tastes just superb..” I was sooooo happy that i forgot my clicking for a while and had a bite too.. Wow!! It was truly awesome.. Just can’t explain the yumminess in words.. I could not believe i had made it… Doesn’t it look fab too??

So if you have the ingredients lying in your pantry, just pick it up and carve out this super delicious burfi… You will love it for sure… Happy Makara Sankranti dears!! 🙂

RECIPE:

Adapted from: Indobase

Ingredients:
1 Cup Sesame seeds/Til
1 Cup Milk Powder
1 Tin/395g Condensed Milk {Sweetened/Unsweetened}*
1/2 Stick Butter
1 1/2 blocks of Jaggery {Approx 1 Cup}
Chopped dry fruits {cashews or almonds} for Garnish

* If you want the dessert healthier, you can add unsweetened condensed milk as jaggery is more than enough for the sweetness.. I added sweetened as i had it available in stock…
Recipe:
1. Dry roast the sesame seeds on medium flame till slightly brown in colour.. Keep aside to cool..

2. Take 1/4 Cup water in a pot and melt jaggery in it… Allow it to cool..

3. During that time, coarsely powder the roasted sesame seeds in a dry mixer..

4. Mix the powder with milk powder,condensed milk and butter in a large microwave safe bowl..
Note: The bowl should be large enough to account for spills as the mixture boils..

5. Sieve the jaggery syrup and add to this mixture.. Mix well..

6. Microwave this mixture on high for 3 mins…

7. Remove and mix well once using a spatula…

8. Microwave again on high for 3 mins.. Remove..

9. IMP STEP: Now with a spatula, keep mixing till it loses all moisture and becomes a thick mixture..
Note: If it still has moisture,microwave again for a minute or so..
10.Pour into a greased tray and allow it to cool…

11.While it is slightly cooled, cut into desired shapes and garnish with chopped dry fruits..
Note :The burfi sets and becomes hard once cooled completely… If it does not, keep it in the fridge after cooling down and it will set properly..

Serve warm or chilled and enjoy the festive season of Makar Sankranti with your loved ones!!

Note: Though i have not tried it the stove top way, you can definitely make it if you don’t have a microwave like i made this Coconut Burfi.. Just follow till step 5 and cook the mixture on medium flame till it leaves the sides of the pan and then pour the mixture onto a greased tray..
