Mango Rava Cupcakes | Easy, Eggless, Vegan Mango Semolina Muffins

                 
                               Yeah! Finally my first post on my new site. It took me more than a month to shift from blogger and then to learn wordpress. But yes, I am so much in love with the new look. How do you all like it?

In this one month’s time, I tried a whole lot of healthy recipes and most of them came out amazing as well. One of them is this Mango semolina muffins. I have been baking them quite often now as it is peak mango season. They are super easy to make and very healthy too. Also if you are Vegan, this one is for you as it does not use milk or yogurt nor butter. 

                                          You can call this a one bowl cupcake as it does not require sifting or mixing of dry and wet ingredients etc. The simplest cup cake I have ever made. My toddler also loved it a lot and kept asking for more all day. Finally I had to hide it and the next time I looked for it, it had already got over (the hubby had found my hiding place!).

                                          So do try this delicious recipe before the mango season gets over and treat your family with these little bites of heaven. Happy and healthy cooking!

RECIPE:

Adapted from: Smiling notes

Ingredients: {Makes 7 muffins}

  • 1 Cup Semolina (Fine variety or chiroti rava works best but I used the regular upma rava)
  • 2 Alphonso Mangoes (substitute with 1 Cup canned mango pulp)
  • 1/2 Cup Cane Sugar or powdered Jaggery
  • 1/4 Cup Oil (Sunflower/Canola)
  • 1 tsp Baking Powder
  • A pinch of salt

Step by Step Recipe:

1. Peel and chop the Mangoes. Grind along with cane sugar or jaggery to a smooth paste. Keep aside.
2. Mix semolina, baking powder and salt in a bowl. Add oil and mix well.
3. Add the ground mango pulp. Mix well. Keep aside for 10 mins.
4. Preheat oven at 180 C for 10 mins.
5. Pour the batter one by one in a well greased muffin pan.

6. Bake for 20 mins.

7. Prick a toothpick in the center to check if done. If the toothpick comes out clear, it means it is done. If the toothpick comes out sticky, bake for few mins more. 

8. Allow it to cool. Remove the muffins from the pan and serve warm.

Note:
* Store in an airtight container for a day at room temperature. If they last more than a day (which has never happened at my place ;)), store in the refrigerator and microwave just before serving.
