Mango Oats Halwa | Mango Oats Fudge | Easy Vegan Dessert

                                      Mango dessert.. Again?? I myself am surprised.. This is in fact the first mango season that i have tried so many recipes with the king of fruits (Post pregnancy cravings??!!) and turned lucky too when they came out great.. So after Aam ka Muzaffar and Mango Yogurt Gelato, here is a quick, healthy and super delicious Vegan Mango Oats Halwa..
                                     This was again found by my recipe “hunter” of a husband.. He had bought delicious Alphonso mangoes and wanted me to try something unique with it.. So started the google search and recipe readings.. I felt like some boss who was rejecting almost everything he read out {was in no mood to cook nor blog!!}.. But he in his “never give up” style continued.. Suddenly i heard Mango Oats Fudge and my ears perked up in interest.. Then he read the ingredients and the blogger me sprang next to him.. It was an amazing recipe which inspired me to cook instantly.. {Yes, that’s me! Amazing recipes does push me towards the kitchen and my husband very well knows it! That explains his “never give up” attitude.. Lol}

                                              So here is one healthy halwa with very less ingredients, can be made instantly and is super delicious.. Do try it and you are sure to love it!

Ingredients: {Serving size – 2 to 3}
3/4 Cup thick Mango Puree {fresh or canned}
1/4 Cup Instant Oats
1/4 Cup whole Cashews
1/3 Cup desiccated Coconut {or dry roasted fresh ones}
2 Tbsp powdered Jaggery {or Sugar}
A pinch of Salt
1/4 tsp Cardamom powder
Roughly chopped Almonds for garnish

1. Powder Oats, Cashews (coarsely) and coconut separately in a dry mixer..
Note: Also powder sugar if using instead of jaggery..

2. Dry roast the oats powder on a medium flame till the raw smell goes away..

3. Add Cashew powder, coconut powder, jaggery/sugar, salt and mix for half a minute..

4. Now add mango puree and keep mixing for 4 to 5 mins till the mixture turns thick..
Note: If the mixture is too sticky, keep adding a Tbsp of coconut powder and if too dry, a Tbsp of mango puree till the mixture reaches desired consistency..

5. Add cardamom powder and remove the mixture onto a bowl..

6. Garnish with chopped Almonds and chill for an hour covered with foil..

7. Serve in individual bowls or cut into pieces (if the mixture is firm enough)..
