Khamang Kakdi | Tempered Crunchy Cucumber Salad

Fresh bag of cucumbers – Salad theme in food group – Recipe hunt – Khamang Kakdi!! This is how i finally found this yummy recipe.. Have i made any sense? Actually was in a mood to write some headlines first and then write the detailed story.. Last week during grocery shopping, i chanced upon these crisp and fresh cucumbers and decided that these will only go into a salad and not into my usual breakfast dishes, Instant Cucumber Dosa and Cucumber Idli

Apt for the time, we had this salad theme coming in my fav food group kkaj.. So started my recipe hunt and found this amazing looking salad with a unique name, “Khamang Kakdi”.. The recipe was also very easy and my blogger brain gave a huge nod in approval to this salad..

I made this for dinner and i was truly blown over by its amazing yet simple flavors.. The roasted peanut powder and the freshly grated hint of coconut in the salad gives it the unique delicious taste and ahhh not to forget the crunch of the freshly chopped cucumbers.. I could just eat this anytime of the day..

If you live in Maharashtra, you might be already aware of this recipe.. This one is for people like me who did not know and have cucumbers in their fridge waiting to be used in a yummy salad.. Do try and you are sure to try this again and again..

RECIPE:

Ingredients:
2 medium sized Cucumbers
2 Green Chillies
2 Tbsp freshly grated Coconut
1/4 Cup Peanuts
1 Tbsp grated Jaggery
Salt to taste
1 Tbsp Lemon Juice
2 Sprigs Coriander leaves for Garnish

For Tempering:
1/2 Tbsp Oil
1/2 tsp Mustard seeds
1/4 tsp Cumin seeds/Jeera

Recipe:
1. Dry roast the peanuts in a pan till they are slightly browned and start giving out an aroma..

2. Cool and coarsely powder them in a blender.. Keep aside..

3. Chop cucumbers into bite size pieces/finely chop as per your wish..

4. Add the peanut powder, coconut, green chillies, jaggery, salt and lemon juice.. Mix well..
Note: The leftover peanut powder can be stored in a dry jar and can be used during another salad..

5. Prepare tempering with mustard seeds and cumin seeds.. Allow the seeds to splutter..

6. Pour over the salad and mix well..

7.Garnish with coriander leaves and serve immediately..
