Kadhi Chawal – A Comfort meal combo

“Simple is Beautiful” is a well known quote… I would like to make an addition to it which perfectly describes this post for me – “Simple is Beautiful and Yummy too!”….. Seriously!!

This story dates back to the time {ahem! Do i sound like i am going into the medieval times?? Lol.. I’m not..} when i had gone to a friend’s home for meetup [and eatup] and she had made this humble but super delicious combo, “Khichdi with kadhi”… I was so impressed with the flavors that i recreated {tried to} it as soon as i reached back home.. Although khichdi was a super duper hit and i have also shared the recipe here as a Ready in 15 mins one pot meal, my hubby did not find the kadhi similar to the one he had eaten in Gujarat….. So i was not fully satisfied and was looking out for a recipe which he would like..

                      Then i had this meetup turned lunch at another northie friend’s place {Yes, I love eating.. Anywhere Anytime..} and she made this “Kadhi Chawal” combo… I was simply mind blown by the amazing flavors that i asked her some to take back home {Shameless when it comes to food!} to ask my hubby if this is what he wanted…. And it was definitely worth!! He simply loved it….

I then asked her for the recipe and made the same last weekend as a comfort meal, an ideal way to relax the day…. This meal is so easy to make and you can’t believe how tasty this is with its simple and delicate flavors.. So if you are in no mood for elaborate cooking, this combo is ideal as it is easy to make and very filling..

Here are some points regarding Kadhi that she told me:
1. Kadhi is very good for digestion..
2. If you add onion pakoras to the kadhi and boil it for a while, it makes “Kadhi pakoda” which is yet another yummy treat with rice or roti..
3. Every family has their own variation to kadhi, the common ingredients being yogurt and chickpea flour… All ingredients used in the seasoning are to taste… You can make changes accordingly..
4. Always boil the kadhi on medium to low flame stirring occasionally till the desired consistency is reached..
5. Always add salt before the kadhi starts boiling…

RECIPE:

Ingredients:
2 Cups Yogurt/Curd
1/2 Cup Besan/Gram flour
1/2 Tbsp Red Chilli Powder
1/2 Tbsp Garam Masala Powder
1/2 Tbsp Coriander Powder
1/2 Tbsp Turmeric Powder
Salt to taste

For Seasoning:
1/2 Tbsp Oil
1/2 tsp Mustard seeds
1/2 tsp Cumin seeds/Jeera
1/4 tsp Fenugreek seeds/Methi
A sprig of Curry leaves
1/2 inch Ginger {grated}
3 cloves of Garlic {grated}
1 Onion {finely chopped}
2 Green chillies {finely chopped}

Coriander Leaves for Garnish

Recipe:
1. Beat the curd well in a bowl to remove lumps…

2. Add the gram flour and mix well to remove lumps..

3. Add red chilli,garam masala,coriander and turmeric powder and mix well.. Keep this aside..

4. Heat oil in a thick bottomed soup pot and splutter mustard seeds.. Add fenugreek and cumin seeds and allow it to change colour..

5. Add curry leaves, onion, ginger, garlic and green chillies and fry till onions turn translucent…

6. Reduce flame to MEDIUM…Add the curd mix, salt and around 2 cups of water…. Allow it to come to a boil…
Note: Keep the flame on medium all the time.. The kadhi should come to a boil gradually and not all of a sudden as it might lead to the curd getting split..

7. When the kadhi starts boiling, it will get these dark yellow surface layer…. Every time this develops,stirr once….
Note: I had to stirr once every 3-4 mins…. Do keep and eye on it…

8. Allow the kadhi to boil for 12-15 mins {stirring occasionally} till the gram flour is cooked well along with the spices..
Note: Check for salt and powders here…Add more if desired and mix well…

9. When the Kadhi has reached the consistency you like {depends on whether you like it thin or thick}, switch off the flame and garnish with coriander leaves…
Serve hot with rice or this instant ready in 15 mins Dal Khichdi and enjoy a comfort meal with your family!!
