Instant Strawberry Honey Jam

                                     I Love easy recipes!! {Who does not??} I am sure all of us {especially if hungry!} go crazy and head straight into the kitchen when we find a instant recipe.. And especially if the recipe is of an ingredient which was begging to be used, how can you not go super crazy?? Now, I had these “suddenly turned cheap” packets of strawberries which were waiting to be used up in a new recipe.. Just my luck when my neighbor and friend, Jayashri posted this delicious looking jam on fb.. As i read her recipe, it just had two ingredients – Strawberry and Sugar.. Whaaaat?? Just two!! I reread to check if i have missed something.. But no!! This was it.. Imagine my excitement….

                                     As i thought over it, my healthy ideas came up and decided to substitute sugar with honey.. Also did a quick google search and found out honey could definitely be used in jams.. Just that since there is no sugar {which is a preservative too!}, i would have to refrigerate.. Now that was not a big deal.. So Strawberry Honey jam was going to be my next recipe on blog, i decided!
                                     My hubby too was excited and kept calling from work to check how my “Jam making session” was going.. And here the scene was: hands sticky, camera in one hand, phone in the other, brain filled with ideas on photo session, counter dirty but the heavenly aroma of freshly cooked jam made me forget everything and my mouth watered… 

                                          
                                         Finally after my camera finished its work, i took a slice of bread with the “Proudly homemade” Jam.. Omg! It was simple amazing! You might feel i am blowing my own trumpet but that’s really true.. This jam comes out way better than store bought ones as it has the original wonderful strawberry flavor and the goodness of honey.. So why wait?? Grab the berries and jam them out! You will love it for sure.. 🙂
                                        And my husband?? The jam along with a packet of bread got finished off in no time… 😀 I really thank dear Jayashri for her simple and amazing recipe.. Happy and Healthy Cooking!!

RECIPE:

Ingredients:{Makes approx 1 Cup Jam}
2 Cups roughly chopped Strawberries {Read point 2 in Notes}
4 Tbsp Honey

Recipe:
1. Add the roughly chopped strawberries in a thick bottomed pan and heat it over medium flame..

2. The strawberries will slowly leave water.. Keep stirring occasionally and remember to keep the flame on medium always..

3. When the strawberries get almost mashed up and the liquid turns thick, add honey..

4. Simmer till the liquid reaches desired consistency..

Notes:
1. If you like the consistency to be slightly thinner, add water {1 Tbsp at a time} and simmer for 2 more mins..
2. Since i like pieces of strawberries in between the jam, i chopped fairly large.. If you want a jam free from strawberry bites, you can always chop them fine or blend them.. This way the jam reaches the desired consistency even more quickly..
3. The strawberries i get here are less sour.. So i added honey.. But if the strawberries you get are very sour, substitute honey with sugar..
4. This Jam can be stored in an air tight container in fridge for at least a week..
Spread over your regular toast or Eggless French Toast and Enjoy your homemade Strawberry Jam!
