Instant Rava Idli

Rava Idli is undoubtedly the “King of Instant Idlis”… This idli does not require all the tedious soaking,grinding, fermenting process as required by other idlis and comes out super delicious… To tell you the truth, this was the first ever idli i learned and made after marriage… So why did it take me so long to post such a simple idli, you might ask… Actually i was under the impression that this recipe was known to most of you and was feeling ashamed to post such an easy recipe.. {ha… me n my stupid thoughts}

                        The first time i felt i should post this recipe was during our last trip to India… I saw my aunt buying MTR Rava Idli mix… When i asked her why she was buying it when the mix could be easily made at home within 5 mins, she was amazed and asked me for the recipe… So then i understood that many still did not know this recipe and i should post it here.. {At least for those who follow my blog!}

Then just last week when i was planning to make them for dinner, my hubby suddenly asked “Have you added them to blog?” {Blog has not only made me but also him crazy for it.. We think food n blog 24*7 now!}… When he saw the sheepish look on my face, he said “Don’t be lazy.. Click and add as soon as possible”… Click reminds me, i did click a lot that day..Here is one among them.. Don’t the idlis look yummy?? 🙂

So, finally here i am with Rava Idli recipe for you…. As i am doing it since long, i seriously have no idea from where i got the recipe but can assure you that it is fool proof… Try it and it won’t disappoint you if you follow the measurements and steps correctly..Do try and enjoy it & forget all instant packs… Happy and Healthy Cooking!!

RECIPE:

Ingredients:
1 Cup Rava/Sooji/Semolina
1/2 Cup Yogurt/Curd
1/2 Cup Water {May require around 4 Tbsp more.. check step 7}
1/2 inch Ginger piece,grated
2 Green chillies,finely chopped
Salt to taste
1 tsp ENO fruit salt {Any flavor..}

For seasoning:
1/2 Tbsp Oil
1 tsp Mustard seeds
1 tsp Cumin seeds/Jeera
1/2 tsp Urad dal/Skinned split black gram
8 – 10 broken cashews

Recipe:
1. Heat oil in a thick bottomed wide pan and splutter mustard seeds.. Add cumin seeds and urad dal & fry till dal turns light brown..

2. Add cashews and fry till they turn golden brown…

3. Add rava and fry on medium flame till it gives out a aroma and turns light brown in colour..

4. Remove it into a bowl and allow it to cool for around 5 mins..

5. Add curd and water and mix well..

6. Add ginger and green chillies and mix.. Keep this mixture to rest for 10 mins..
Note: During this time, keep the idli steamer with water on flame and grease the idli moulds with little oil..

7. Now the mixture would have got dry.. Add additional water {1 Tbsp every time} and check for the consistency of the batter, which should be like idli batter consistency {Nor too thick, nor too thin}
Note: It takes me 2 to 4 Tbsp of water each time to bring the batter to the right thickness..

Becomes dry after rest..
Perfect consistency!

8. Add Eno fruit salt and slowly fold it in the batter in clockwise directions {Do NOT mix vigorously}

9. Pour a spoonful each of the batter on to the idli moulds..

10.Steam the idlis for 10-15 mins like normal idlis..
11.Allow it to cool.. Remove the idlis using knife or spoon..

Serve with chutney or sambar!!
