Instant Onion Carrot Uthappam

Do you sometimes have this real bad craving to eat something? Especially when you know you cant get it? I have had such cravings all my life.. My all time hits are for Pani Puri, Motichoor Ladoos, Idli vada sambar(Yum!), Jalebis, Chole Batura……Oh! The list is too long…. (and ya! I do go the unhealthy route sometimes too!)
       This time i had this real bad craving for Onion Uthappam…Yes, you heard it right… Especially because i did not have any leftover dosa batter at that time (So, the craving was more!).. I went to the kitchen in hope of finding uthappams waiting for me there (haha! Me and my fantasy world!)..When i did not find any(Obviously!),i decided to make my own batter.. Just took some plain water, added my favorite semolina to it (I still did not know what i was upto!),added yogurt to it for thickness and sourness..Seasoned with some salt and garnished with onions and there it became my version of onion uthappam..

The uthappams made from this batter are so finger licking good, you wont even remember to leftover some dosa batter for this.. This breakfast is a favorite with my husband too and i make it during weekends so that he can enjoy this yummy breakfast fully.. I add carrots too for making it more healthy.. You can add green chillies and coriander leaves too..

2 Cups Semolina/Rava
1 Cup Yogurt/Curd
Salt to taste
1 Onion and 1 Carrot for topping.. (You can add green chillies and coriander leaves too)

1.Take semolina,curd,salt, little water and mix together to make a thick batter… Keep aside..

2.Meanwhile chop the onion and grate the carrot and make equal size portions..
Note: You can always add more or less later..

3.The batter would have got very thick..So add little water and make it into a pourable but thick batter..
4.Heat a frying pan with oil and pour a ladle full of batter into it.. Do not spread it..Just allow it to take a shape.. Lower the flame to medium..
Note: This dosa should be cooked on a medium to low flame else it can get burnt..
5.Spread the toppings evenly over it..

6.Cover and cook for 2 minutes or till the top surface is cooked..

7.Loosen the edges slowly and flip..

8.Cook for another minute..
9.Remove from flame and serve hot with coconut chutney..
