Instant Oats Appo/ Paniyaram with Pickled Raw Mango Chutney


                                       According to Alexa.com, Google and Facebook are the top 2 sites in the world.. I definitely agree to that and the blogger in me is not far behind in nodding a big “Yes!”.. Be it searching for new recipes or reading tips on food photography or even the simplest of doubts are cleared instantly by Google.. Facebook has been a platform which has not only given me many loving and encouraging friends but also tonnes of recipes from its food groups and otherwise.. I am very lucky to have many foodie friends too who keep sharing their perfect and delicious recipes..


One among them is Suphala Shenoy {Suphalakka as i call her!}.. She is a real gem of a person and a wonderful cook.. Be it her beautiful presentations or her simple but delicious recipes, they have always left me spell bound.. In fact i have many recipes of hers in my notepad which are waiting to be tried {and mind you, being a person with all lazy bones in me, i copy paste recipes only which i truly like! ;)}… Really hope i try all those awesome recipes soon… 🙂

                                     But this was definitely something different… Oats in a Appo!! and that too Instant!! I was truly amazed.. I had previously tried a appo with oats and urad dal and it had become a flop.. So even though excited, i had this teeny weeny fear too… But all my fears vanished when i took a bite into one among these beauties just out of the pan.. 

                                            I was really amazed.. The appos were so delicious you will never guess it is made only of oats.. Had never expected them to turn so good.. The best way to add oats in your diet, for sure.. It is my sincere request to definitely try this recipe and you will love it for sure.. My hubby too ended up saying he wanted more of it.. RECIPE:

Ingredients: {Makes around 15-16 appos depending on the size of your pan}
1 Cup Instant Oats {You could use powdered oats too}
1 Tbsp Rice Powder
1 Tbsp Chickpea flour/ Besan
1 Cup Curd/ Yogurt
Salt to taste

For seasoning:
1 tsp Oil
1/2 tsp Cumin seeds/Jeera
1 to 2 Green chillies to taste,finely chooped
1/2 inch Ginger, finely chopped
1 medium sized Onion,finely chopped
1/2 Cup grated Carrots {You could also use mixed veggies like beans and cauliflower}
2 Tbsp Coriander leaves, finely chopped

Oil to cook the appos

Recipe:
1. Add oats,rice powder and chickpea flour to curds.. Add salt…

2. Mix well and keep aside for 10 mins..

3. During that time prepare for seasoning.. Heat oil in a pan and splutter cumin seeds.. Add ginger,green chillies and onions.. Fry till onions turn slightly translucent but does not lose the crunch..

4. Add grated carrots and fry for few seconds till it changes colour.. Remove from flame..

5. Add coriander leaves and add to the oats-curd mixture..

6. Mix well..

7. Heat the paniyaram pan on high flame and reduce the flame to MEDIUM..
8. Add a spoonful of the batter in each of the molds..

9. Cover and cook for around half a minute till the top surface looks cooked..

10. Add few drops of oil on the sides of the appos..

11. Slowly flip them using the paniyaram spatula and cook them for half a minute till they are slightly browned on that surface too..
Note: Make sure you cook them on medium flame since the appos have a tendency to turn black quickly….

12. Remove and serve hot with ketchup or any dip of your choice..

Here, i have served with Pickled Raw Mango Chutney.. This chutney can be made with fresh raw mangoes and also the ones that we get inside pickles..

Ingredients:
1/4 Cup freshly grated Coconut
2 to 3 raw Mango pieces from the pickle{1/2 inch each} / 1 inch fresh raw mango piece
2 Green Chillies
1 dry Red chilli
3 cloves of Garlic
Salt to taste

Recipe:
1. Blend everything {except garlic} together using little water to a paste slightly short of smooth…

2. Add garlic cloves and blend till the cloves are crushed and the chutney becomes smooth..

Serve with dosas,idlis or appos!
