Instant Cucumber Dosa

When i was very young, i used to see my mom and grandma looking for recipes from a small book..That small book was from a konkani author Jaya V Shenoy…I am sure it is a familiar name for all konkanis as this book is available in almost every konkani household… Though the original version was in kannada, the book had been released in english too and i was lucky enough to get it as a wedding gift from my aunt..It has all recipes ranging from breakfast dishes to dishes from konkani cuisine to north indian curries to home made pickles to desserts…It was my 1st recipe book as a beginner in cooking and remains to be the most special one…

            I got this recipe of rava bhakri from her book but i have transformed it into a soft dosa(Actually its something between a bhakri and a dosa!)… This is such a yummy, easy and healthy breakfast dish that i make it almost every week… It is very filling too and will keep away your hunger pangs till lunch…This dosa combines all healthy ingredients like cucumber,wheat flour,semolina and ginger… These are apt for the times when the cucumbers you bought for salads are lying in the fridge and you want to finish it off…
I must also thank my husband for giving me this idea of putting this recipe in my blog (Never occurred to me!)..Hope you enjoy preparing and eating this healthy tasty dosa!!

RECIPE:

Ingredients: (for 5 to 6 medium size dosas)

2 Cucumbers (grated), I use the English cucumbers that we get here and they are small. If using the Indian variety, one medium sized one will do. They need peeling too before grating.
1 inch piece of Ginger (grated)
3 Green Chillies (chopped finely)
2 Cups Semolina/Rava
1/4 Cup Wheat Flour
2 Tbsp powdered Jaggery / sugar
Salt to taste
Water or buttermilk as required
Oil for greasing the pan

Recipe:
1.Take the grated cucumbers,ginger and green chillies in a bowl..

2.Add the wheat flour,semolina,jaggery , salt and water or buttermilk and make a slightly thick batter..

3.Heat a frying pan…
4.Take a ladle full of batter and pour it on to the pan and spread it slightly from behind your ladle to give it a round shape.. Note: The dosa is enjoyed on the thicker side.. So don’t try to spread it like a normal dosa..

5.Cover and cook for a minute on medium flame till the top part is cooked..

6.Flip and cook for half a minute…

7.Remove from pan and enjoy it with pickle or a dollop of butter or ghee..
