Instant Cornmeal Idli

Last week during my refrigerator clean up, i found this packet of cornmeal lying in it.. Even though i had bought it with great excitement to try makkai di roti , as it wasn’t quite a hit with my husband,i had literally forgotten it ever existed.. All that followed was a series of google searching which led to a conclusion that i could make yummy idlis out of it following the same recipe that i use to make Instant Rava Idli… Even though i was a bit skeptical in trying it out, it came out really well, i must say…
Note:
1.If you already make rava idli at home, follow the same recipe substituting rava with cornmeal…  2.Cornmeal is not corn flour….. Corn flour is white in color and is used as a thickening agent in Chinese dishes… Cornmeal is a yellow in color coarse flour ground from dried corn…

RECIPE:

Ingredients: {Makes around 10 to 12 idlis}

1 Cup Cornmeal (makkai ka atta)
1/2 Cup yogurt (curd)
3 green chillies
1 inch piece of ginger
salt to taste
1 tsp Eno Fruit salt(Any Flavor)

For seasoning:
1 Tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds(jeera)
1 tsp urad dal
10-15 groundnuts
Broken cashews to taste

Recipe:
1. Take a heavy bottomed pan and add all the ingredients mentioned under the title “For seasoning” one by one frying it lightly…Fry till cashews and groundnuts turn golden brown..

2. Add the cornmeal and keep frying in medium flame till it gives a nice aroma… Take this mixture onto a vessel.. Let it cool..
Note: If you are in hurries in the morning, u can  prepare till here the previous night and keep it in the fridge..

3.Add the curd and salt to the mixture along with ginger and green chillies… Add required quantity of water to make a slightly thick batter.. Keep it to rest for around 5 to 10 mins..

4. Add Eno fruit salt to the batter and mix it gently.. Dont keep the batter for too long after this step..

5.Grease the idli plates with oil and put the batter in it.

6.Steam it for around 15 minutes..
7.Take the idli plates out of the steamer and keep for 5 mins to let it cool..

8.Remove the idlis using a knife or a spoon..
9.Serve hot with loads of coconut chutney or sambar… Enjoyy!!
