Instant Brown Bread & Oats Uthappam

                                            Bread is something which I “have” to see on the counter always {and its kind of an OCD!}.. But seriously, with so many recipe options available with it ranging from a quick breakfast of Bread Usli to a delicious snack of Bread Pizza along with a low calorie sweet treat Eggless French Toast, who can resist not stocking it up.. Then when my brother suddenly requested for Masala Pav {and he was to leave the next day}, I had to buy a packet of Pavs for a delicious mumbai style dinner… But din’t I have a packet of bread already waiting to be used? And 2 Pavs got leftover from this packet.. I was stuck now.. So many leftovers!!

                                           With Bread Usli and Sandwiches, the packet of bread got over sooner than I had expected.. But the Pavs were still remaining and the expiry date was nearing like some exam date! Now what could I do with just two of them??

                                             After a lot of recipe “hunting” when I was just about to give a toss to both the Pavs, I was reminded of a recipe my aunt, Anita Pai had shared with me.. It was lying conveniently copy pasted on my notepad and completely forgotten.. I just jumped with Joy! 

                                              As i made the Uthappams for breakfast the next morning, my hubby was smiling all the way {Happy that his wifey was back to cooking & clicking! I guess he missed them too since a fortnight..} The Uthappams were of course tasty and you could never guess that the super food Oats has been added.. That is something I loved the most about this recipe and of course the way it transformed {Am i being dramatic? ;)} my leftover bread into something so delicious… Hats off to my aunt for this unique Uthappam idea! 

                                             Can’t help but also add that it tasted almost like vegetable cutlets with the bread crumbs and the veggies…. I am definitely going to save some of my brown bread for this yumminess… You too try and enjoy! Happy and Healthy Cooking!!

RECIPE: {Makes 5 medium sized Uthappams}

5 slices of Brown Bread {or 2 brown buns/pav like how i took}
1/2 Cup Instant Oats
2 Tbsp Semolina/ Rava/ Sooji, regular coarse variety
1 Tbsp Rice Powder
1 tsp Cumin seeds
1/2 Cup Curd/ Yogurt
Salt to taste

Oil to cook the uthappams

For the Topping: {To choice.. You could also add onions,corn or any veggies you like! My friend even added cheese..}
1/2 a medium sized Carrot, grated
1/4 a medium sized Capsicum, finely chopped
2 Green chillies, finely chopped
3-4 sprig of Coriander leaves, finely chopped

1. Powder both brown bread {bread crumb consistency} and oats separately in a dry mixer… Mix both the powders..

2. Add semolina, rice powder, salt and cumin seeds..

3. Add curd along with around 1 Cup Water and mix well to a slightly thick batter.. Keep aside for 10 mins..

4. Meanwhile chop the veggies for the topping.. Mix well..

5. Heat a non stick pan over high flame and reduce the flame to medium.. 
6. Pour a ladle of batter in the center and spread slightly with the back of the ladle to give it a round shape..
Note: Do not spread too much..  This dosa is enjoyed on the thicker side..

7. Garnish with 1 Tbsp of the toppings..

8. Cover and cook till the top portion looks cooked..

9. Oil the edges of the uthappam.. Flip and cook for few more seconds till the toppings are nicely roasted..

10. Remove from flame and repeat the same with the rest of the batter..
Serve with tomato ketchup or any dip of your choice!
