Instant 7 Cup Dosa with Urad Chutney


                                This recipe is completely dedicated to my husband as it was he who found it out for me.. Remember some days back i had blabbered about my hubby finding out new dosa and idli recipes for me.. Out of them, i have already posted Broken Wheat dosa and Oats Poha Idli which have been a hit with many of my friends.. Now here is the third of his “find” – 7 Cup Dosa… This dosa is by far the most unique and unexpectedly delicious dosa i have ever made.. A mix of lentils and grains makes this dosa healthy and filling too… All in all, i can call this as one of the best dosas on my blog!
                                Btw did you notice the yummy chutney on its side along with the new bowl and plate {Results of my latest shopping spree! Aren’t they cute??}.. This chutney is an amazing recipe by my friend Sumathi who is also the creative genius of KKAJ.. Her presentations are simply mind blowing ones always.. Same adjective can be used for this chutney too.. Even my Hing Chutney lover hubby had to say that he loved this dip with “his” 7 cup dosa {Yes! He calls this dosa as “his”.. After all he did the “hard work” of finding this yummy recipe..Mr Google, please forgive my dear hubby.. ;)}.. 

                                    Actually i was supposed to add this recipe towards the end of this week but i just could not resist posting early.. RECIPE:

Dosa recipe Adapted fromAdige Mane Ruchi

Ingredients:
For the dosa: {Makes 22 to 25 medium sized dosas}
1 Cup Rice
1 Cup Broken wheat/ Dalia*
1 Cup Urad dal/ skinned split black gram
1 Cup Chana dal/ skinned split bengal gram
1 Cup Moong dal/ split green gram*
1 Cup Poha/ Beaten rice/ Rice flakes*
1 Cup Curd/ Yogurt
Salt to taste

Oil to cook the dosa

* Broken wheat can be substituted with Whole wheat, moong dal with whole moong and poha with puffed rice..

For the chutney:
2 Tbsp Urad dal/ skinned split black gram
1 tsp Chana dal/ skinned split bengal gram
1/4 tsp Methi/ Fenugreek seeds
1/2 Cup Curd/ Yogurt
Salt to taste
1/2 Tbsp Oil
1 tsp Mustard seeds
4-5 Curry leaves
3 Green chillies
1/2 inch Ginger piece

Recipe for Dosa:
1. Take 1 cup each of rice,wheat,urad dal,chana dal and moong dal in a bowl..
Note: This dosa recipe requires no soaking but if you want, you could soak these dals along with rice the previous night for easy grinding in the morning..

2. Wash well and drain.. Add to a mixer..

3. Blend with little water to a coarse paste.. Now add washed poha to it..

4. Blend the mixture {adding little water to help grinding} to a smooth paste..

5. Add curd and salt to this paste and mix well bringing it to dosa batter consistency {easy pouring} adding more water ONLY if needed..

6. Heat a pan and reduce the flame to medium..
7. Add a ladle full of batter and pour over the center of the pan.. Using the back of the ladle, spread the dosa as shown..

8. Cover and cook for few seconds till the top surface cooks..
9. Add few drops of oil over the edges of the dosa.

10. Flip the dosa and cook for few more seconds..

11. Remove from flame and serve hot with chutney of your choice..
Note: Leftover batter can be refrigerated for use later..
Here i have served with Urad Chutney/ Udida Gojju.. A yummy accompaniment to dosas, idlis and rotis!

Recipe for Urad Chutney:
1. Dry roast the urad dal,chana dal and methi over medium flame till its gives out a wonderful aroma..
2. Cool and powder the dry roasted dals in a dry mixer..
3. Add this powder along with salt to curd.. Mix well..
4. Prepare seasoning by heating oil in a pan and spluttering mustard seeds.. Add curry leaves,ginger and green chillies.. Fry for few seconds..

5. Pour over the curd mix..

Serve with dosas, idlis or rotis!
