Haryanvi Meethe Pude | Sweet Pude | Jaggery Wheat Pancakes

Before i begin my chatter today, i have a little “from the heart” speech to make… I want to thank my favorite food group KKAJ for being the platform in every way to bring out the best in me.. Be it exploring variety cuisines or trying my hand at food art or learning long forgotten dishes and the most important one being the encouragement that i get from every member there… It is just overwhelming.. I really feel special to be a part of this wonderful group! Thanks a lot my dear ones from KKAJ.. You mean a lot to me.. 🙂

                           Today is the Haryana state theme in the group… I had been searching for easy and unique recipes since long and finally a couple of days back, came across this easy dessert, Meethe pude… As it combined two of my favorite ingredients, Jaggery and wheat flour, how could i say no to it… It also reminded me of my First post in this blog Ragi Malpua.. Healthy and tasty, i had now found my recipe for the Haryana theme…

I made it as a quick evening treat yesterday and we relished it with some flavored milk {as if the sweetness in the pudes were not sufficient!}… It was a super yummy combo.. The hot pudes with chilled milk is definitely a heaven made couple….But rest assured, i would never mind eating the pudes on their own… They are super soft and delicious, i can even name them an instant version of the sweet dosa Surnali.. If you have tasted surnalis, you can imagine the yumminess of this dessert…

So get ready for a super easy recipe of Meethe Pudes…. A word of caution though.. Read the recipe only when you are free as you are sure to get stomach rumbles and will definitely hit the kitchen to try this sweet treat instantly.. haha.. Just kidding! Inspired fromIndian Food

Ingredients: {Makes around 7 to 8 medium sized pudes}
1 Cup Wheat flour/ Atta
1/2 Cup Jaggery
1 Cup Water {+ 1/2 Cup}*
1/2 tsp Fennel seeds/ Saunf {Optional but gives a wonderful flavor!}
1/4 tsp Cardamom Powder/Elaichi powder
Ghee/Butter to cook the pancakes

* 1 Cup water for melting jaggery and 1/2 Cup to bring the batter to pourable consistency..

1. Melt Jaggery in 1 Cup water..

2. Allow it to cool..

3. Add wheat flour, mix well to remove all lumps and form a smooth batter..

4. Add 1/2 cup water and bring the batter to pourable consistency.. Keep this aside for 30 mins..
Note: The batter should be slightly on the thicker side…

5. Add fennel seeds and cardamom powder and mix well..

6. Heat a non stick pan on high flame and reduce the flame to MEDIUM..
7. Pour a ladle of the batter in the center of the pan and allow it to take a round shape.. Do NOT try to spread it..

8. Cover and cook for few seconds on medium flame..
9. When the top surface looks cooked, apply ghee/butter on top and sides of the pancake..

10. Slowly unwind the sides and flip..

11. Cook for few more seconds..
12. Remove from flame..
Serve hot Pudes as it is or with chilled flavored milk or yogurt!! Enjoy! 🙂
