Halbai | Rice Jaggery Halwa

                                             Yipee!! I have got a personal recipe search bar at home.. My hubby!! This man along with me has turned blog crazy.. Whenever he gets free time now, instead of the usual news watching, he sits and searches for new recipes.. So sweet of him na? He reads out each recipes and if i find it interesting, bookmarks so that i can check out when free… Though i used to tease him for his recipe searching initially, i now realize how much helpful that is for me.. Almost all recipes i posted recently have been found by him from various sites.. 
                                              Halbai is one of those sweets my grandmother used to make as a evening snack when i was a kid {Just a vague memory..}.. But i never knew the name nor remember eating it in the recent past.. It was when my husband showed me the pic of this delicious dessert, i got this sudden craving and decided to try them soon.. But the recipe he had bookmarked was not convincing and i did a quick google search..
                                               And what do i find?? My dear friend Smitha who blogs at Cook with Smile had a mouth watering halbai recipe… Did i need to think more? I made it that day itself and the dessert got over within few minutes.. It was so delicious that we had the “last piece fight” also for it..

                                                 The best part is that it came out almost similar to my grandmother’s halbai.. Soft, aromatic with incredible flavors.. I was thanking my hubby the whole day for finding out this long forgotten dish and also my friend for her perfect recipe.. Thanks Smitha! A must try recipe for sweet lovers’.. Ingredients: { Makes 15 – 17 square pieces of halwa}
1 Cup Rice {I used Basmati.. You could also use regular rice.. }
1/2 Cup freshly grated Coconut
1/2 Cup Jaggery
2 Cardamom pods/ Elaichi
Butter/Ghee to grease the plate

1. Wash well and soak rice for 2 to 4 hours..

2. Drain water from the rice and grind along with coconut and cardamom using around 1/2 Cup water to a smooth paste..
Note: This batter should be on the thinner side.. {slightly thinner than dosa batter}

3. Melt Jaggery in 1/4 Cup Water on medium flame in a non stick pan/ thick bottomed pan..

4. Add the rice-coconut batter using left hand and with right hand, keep mixing continuously using spatula till the mixture leaves the sides of the pan and forms a mass..
Note: Mixing should be done swiftly to prevent lumps..

5. Now remove the mixture onto a greased {with butter/ghee} plate..

6. Spread evenly using a spatula or clean fingers..

7. When warm, cut into desired shapes.. Allow it to come to room temperature..

Note: I don’t think there would be any leftovers, but in case there is, the halwa pieces can be stored in fridge in an air tight container for the next day..
