Green Apple Salad | Hare Seb ka Raita

                                    To tell you the truth, i am not a salad person.. Even though i have tried eating only salads for dinner, within a couple of days, i am back to my regular meal of brown rice and some curry.. Salads for me are carrot kosambari or Khamang Kakdi which i love as an accompaniment alongside meals.. Apart from that i have never really tried variety of salads {which leaves me embarrassed as it is an important part of healthy cooking!}.. So i promise myself that here forth i will add more salads in my diet and also in the blog….

Last month one of my friends, Jayashri posted this beautiful looking green apple salad from Asha mais cookbook… Green Apple Salad?? I really wondered how it would taste… Right at the time, i also found another recipe of pickle with green apples.. haha.. Now i really had to buy some green apples, i decided! So i bought around 5… Since i could not resist the easy recipe of salad, i tried it for dinner that night itself.. As i took a bite of it, i completely forgot about my rice and went on gobbling up the salad.. It was that tasty… The seasoning with “hing” {which is one of our common fav!} takes this salad to another level.. And how can i forget the little bites of raisins… It was just out of the world..

                                       The funniest part is that day i actually did not eat rice as my tummy was filled with this refreshingly yummy salad… And you can guess what happened to the rest of the green apples.. All went into this salad on special request from hubby… He just loved it very much.. Now yesterday while grocery shopping, i did not have to tell him and he picked up green apples again.. I am making them today.. You too try this deliciousness and enjoy… Happy and Healthy Cooking!!

Ingredients: {Serves 2 to 3 people}

My Favorite book of all!!

1 Green Apple
2 Cups Yogurt/Curd
1 Tbsp Raisins
2 Green chillies, finely chopped & crushed
3 sprigs of Coriander leaves, finely chopped
1 tsp Sugar
Salt to taste

For seasoning:
1 tsp Oil
1/2 tsp Mustard seeds
1 sprig of Curry leaves
A generous pinch of Hing/Asafoetida

1. Soak the raisins in little warm water for 5 to 10 mins..

2. Meanwhile beat the yogurt well till it becomes smooth in texture and add bite size chopped green apple pieces.. Mix well..

3. Add crushed green chillies,coriander leaves,sugar,salt and raisins…Mix well..

4. Prepare seasoning by heating oil,spluttering mustard seeds, adding curry leaves and hing.. Fry till the curry leaves are roasted slightly.. Pour over the salad..

5. Mix well..
Serve as it is or with your choice of flavored rice or plain rice.. I prefer eating it with Dal Khichdi.. They make a healthy and tasty, also quick to make combo…
