Eggless Strawberry Cake – Healthy Version


Party time in my kitchen!! At last i have baked a cake on my own adding to the fact that it is egg less, sugarless, sans All purpose flour and made with easily available ingredients.. I am so very happy…. The eagerness to bake a cake has been since i started my baking journey but somehow it did not work out… So when i bought some strawberries last week, i decided to use it only in a cake…

            After days of searching for healthy cake recipes, i did not find one single recipe of an eggless cake made with whole wheat flour and no sugar.. All recipes either had all purpose flour or sugar (cups of it!) which was a BIG no no for me..Then at last i finalized this recipe from saffron trail but substituted all purpose flour with whole wheat flour and  refined sugar with honey…

Although happy with my idea, i was not sure of the outcome because i had heard that cakes made with whole wheat flour do not rise well… With all the doubts in mind, i went ahead with the recipe clicking pictures but not sure of the outcome…I sat in front of the oven for the whole 30 mins baking time (Haha!)..But the sitting was worth it.. I saw how my cake raised beautifully and not to forget the wonderful aroma…

The cake was so moist and spongy that i have to forget store bought cakes from now on… It is also such an easy recipe… You cannot go wrong here if you measure everything and prepare accordingly.. And you also have my pictures to help you during each step..

I am dedicating this cake to my husband as it is his birthday today… Hope to bake more and more healthy cakes in future..

RECIPE:

Ingredients:

Dry Ingredients:
1.5 Cups Whole Wheat flour
1 tsp Baking Powder
1/2 tsp Baking Soda

Wet Ingredients:
3/4 Cup Yogurt/Curd
1/4 Cup Milk
1/4 Cup Cooking Oil
4 Tbsp Honey
2 Tbsp Mixed Fruit Jam
1 tsp Strawberry Essence or any fruit essence or Vanilla essence

Freshly chopped Strawberries

Recipe:
1. Measure yogurt,oil, milk and jam and add to a bowl..

2.Add honey and essence and whisk well to get a fluffy texture..Keep aside..

3.Sift the wheat flour along with baking powder and soda so that they mix well and free from lumps..

4.Add the sifted flour to the wet batter and fold in with a spatula.. Do NOT over mix or whisk vigorously..

5.Add chopped strawberries to the batter and fold the batter again..
Note: I keep the strawberries wrapped in a paper towel inside a Zip lock Bag in the fridge… This keeps the strawberries fresh for at least 2 weeks..

6.Preheat the oven at 180 C for 10 minutes..
7.Meanwhile line a Oven proof Bowl/Cake Tin with Baking Parchment/Butter Paper… Pour the Cake Batter into the bowl.. Spread it evenly in the bowl with the help of a spoon..

8.Bake at 180 C for 30-40 minutes until a toothpick inserted comes out clear and the surface of the cake is slightly browned..

9. Cool it on a wire rack for 10 minutes..

10.Cut into slices and serve…
