Eggless Rose flavored Jaggery Cake | Using Wheat flour

                                                      A recipe to post after ages! Ashritha takes up all my time as shes in her crawling stage and blog has definitely taken the back seat now.. But but but there is my encouraging husband who does not allow that to happen for long and literally keeps pestering me to write {Actually grateful to him for that else i am one lazy blogger!} And there are some recipes which can’t-be-not-blogged.. Rose flavored Jagggery cake is one among them.. Have already baked this yumminess twice within a week as they are too delicious and quick to bake..

                                                   I am a huge cake fan and can’t resist the bakery pastries and sponge cakes.. But there have been few instances in the past days that I have decided never to buy them again.. The pastries that were bought with great zeal from renowned bakeries here went straight into the bin as we could not have more than a bite.. God knows what’s been added into them.. The sponge was hard and the cream had an unexplained uneatable taste.. That day we decided, Home made cakes are definitely the best!

Look at how beautifully this cake has risen! I just could not believe that it was a wheat flour jaggery cake.. My hubby’s idea of adding rose syrup was the best.. The rose flavor complemented the wheat and jaggery flavors and gave it the incredible taste..

                                              So why buy those sugar laden cakes when you can bake a healthy cake in less than an hour.. Also your family will definitely love the freshly baked aroma that will fill the house.. Try this Rose flavored Jaggery cake and enjoy!

1 1/2 Cups Whole wheat flour {I used Pillsbury Atta}
1 Cup Yogurt/ Curd
3/4 Cup Powdered Jaggery/ Gur
1/2 Cup Oil {Sunflower/ Canola}*
1/4 Cup Water {room temperature}
2 Tbsp Rose syrup {I used Dabur rose syrup} **
1 1/2 tsp Baking Powder
1 tsp Vanilla extract

* Substitute with melted butter for a richer flavor.
**Substitute with a syrup of your choice or make a plain jaggery cake with no syrup at all..

1. Preheat the oven at 180C for 10 mins..
2. Sieve wheat flour and baking powder together.. Keep aside..

3. Take powdered jaggery in another bowl and add yogurt.. Whisk well till jaggery melts..

4. Add the 2 Tbsp rose syrup,1/2 cup Oil, 1/4 cup water and vanilla extract.. Whisk again..

5. Slowly add the flour mixture little by little to this and keep folding in with a spatula so that both the mixtures are well combined.. Do NOT over mix..

6. Line a loaf pan with baking parchment and pour in the mixture..

7. Bake for 30-35 mins or till a toothpick inserted in the center comes out clean..

8. Allow the cake to cool completely.. Then invert onto a plate and remove the parchment paper..

9. Cut into slices and serve..
10. Remaining slices can be refrigerated in an air tight container.. Just microwave for a minute before serving..
