Eggless Rava Banana Cake | Easy Semolina Cake

                                          I am super excited! My brother is coming to Qatar tomorrow {His 1st ever time!} and along with him are all the goodies specially packed by mom and dad for me {Sorry “Us”; their doting son-in-law included, if i save for him, that is! ;)}.. Day dreaming about it made my face beam with a contented smile.. What’s better than utilize this merry time for a new blog post… So here i am with a cake which i made twice in a week… Can you guess why?? Yes! Loved it so very much!!

                                        Some days back, i was on a look out for recipes with ripe bananas.. At our place, due to the extreme hot weather, the bananas go black before we realize and both of us hate black bananas {Even though we know and as my dad would say, they are the sweetest! But still they are black.. Yuck!}.. My first recipe to try was of course Mangalore Buns which are the best way to finish the bananas off… And what if they are still leftover?? My friend Donna found me another awesome and a keeper recipe of Rava Banana Cake.. Since Uma {our common friend} had tried and loved Donna’s recipe, she shared with me her variations too.. Finally what i get is this delicious looking and super yummy Banana Cake! 

                                          The best part was it was flour less.. No worries about using all purpose flour and no nutty flavor of whole wheat flour.. Just a simple, healthy and foolproof recipe of a delicious cake.. I also made this for my friend Renuka’s kids and they loved it as well.. It is definitely a must try recipe.. Health Benefits of Semolina: Made from durum wheat,keeps you full for a longer time and hence prevents overeating.. Improves Kidney function (due to its potassium content),Good source of vital vitamins E and B which are essential for good immunity from diseases..


1 1/2 Cups Rava/ Sooji/ Semolina {Regular Rava}
3 large Bananas, peeled {Riper, the better!!}
1 Cup Milk
1/2 Cup Sugar
2 Tbsp Ghee/ Butter
2 to 3 Tbsp Chopped Nuts {of your choice + tutti fruti if desired!}
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Cardamom Powder
2 to 3 strands of Saffron {Optional!}, soaked in a Tbsp of warm milk for 10 mins

1. Dry roast rava on medium flame till it changes colour and gives out a nice aroma.. Keep aside..

2. Preheat the oven at 180 C for 10 mins..
3. In a large bowl, mash the bananas completely using a fork/ masher..

4. Add milk, sugar and butter.. Also add the saffron milk.. Mix well using a whisker..
Note: If using butter, melt it by microwaving for a minute or heating it on stove top and cooling it..

5. Add the roasted rava and mix well free from lumps..

6. Add chopped nuts and tutti fruti..

7. Sieve baking soda and baking powder & add to this mixture.. Also add cardamom powder.. Mix well..

8. Grease a baking tin or line the tin with parchment paper.. Pour in the mixture..

9. Bake at 180 C for 25 to 30 mins till the surface of the cake turns light golden.. Insert a toothpick at the center to the cake.. If it comes clear, the cake is done.. If not, keep for 5 mins again..
Note: I have made this cake twice now and both times, it came out perfect at 30 mins.. But since every oven is different.. So keep an eye!

10. Allow it to cool for 10 mins.. Now invert it onto a plate..

11. Remove the parchment paper..

12. Cut into slices and serve warm..

Enjoy it with your evening cup of coffee!
Note: The remaining slices of cake {if any} can be refrigerated in an air tight container and microwaved for a minute or so when required.. Stays good for a couple of days!
