Eggless Orange Walnut Muffins

One more successful baking attempt in my kitchen! So proud of them…Baking always brings about a joy which can’t be explained.. With a success in baking a cake last week, i was very much eager to try out some muffins with my most prized possession, the muffin tray (Yes it is!)… I had also planned to give it some fruit flavor by adding fresh fruit juice as a change to my Eggless Strawberry cake where i had chopped the strawberries and added.. To add to my ideal muffin making situation, my husband had bought loads of oranges and wanted me to finish them off.. He gave me the wonderful idea of using them in a cake or muffin…

          So with the situation built, i started my muffin making process… I followed the same recipe as my cake and it came out just perfect.. Every time i bake, i have to sit in front of it the whole of the baking time (You might find it crazy!) but its real fun… I saw how my muffins rose and browned and turned pretty… I could not wait to leave it to cool… Thanks to my new muffin liners, they have come out very beautiful and i had great fun unwrapping them…
These home made muffins can be enjoyed guilt free as they are made fully with whole wheat flour, sugarless, egg less with the goodness of freshly squeezed orange and walnuts.. What more do you need? Just try them and enjoy these cute little goodies with your loved ones..

RECIPE:

Ingredients:

Dry Ingredients:
2 Cups Whole Wheat flour
1 tsp Baking Powder
1/2 tsp Baking Soda

Wet Ingredients:
3/4 Cup Yogurt/Curd
1/4 Cup Milk
1/4 Cup Cooking Oil
4- 5 Tbsp Honey
2 Tbsp Mixed Fruit Jam
1 tsp Orange Essence or any fruit essence or Vanilla essence
Juice of 1 Orange
1 tsp Orange zest

Roughly chopped Walnuts to taste

Recipe:
1. Measure yogurt,oil, milk and jam and add to a bowl..

2.Add honey,essence, orange juice and orange zest and whisk well to get a fluffy texture..Keep aside..

3.Sift the wheat flour along with baking powder and soda so that they mix well and free from lumps..

4.Line the muffin tray with the liners… Also chop the walnuts and keep aside..

5.Add the sifted flour to the wet batter and fold in with a spatula.. Do NOT over mix or whisk vigorously..

6.Preheat the oven at 180 C for 10 minutes..
7.Fill the batter into the muffin molds one by one… Do not fill more than 3/4th of the molds..

8.Garnish with chopped walnuts..

9. Bake the muffins at 180 C for 25 minutes till the top surface of the muffins start browning..

10.Insert a toothpick to find if it comes out clear.. If not, bake for another 5 minutes..
11. Allow it to cool for 10 minutes..

12. Remove the liners and enjoy the soft, fluffy and yummy muffins guilt free..
