Eggless Dates Carrot Cake

Last month when we had gone to this huge bakery {which had this wonderful freshly baked aroma!}, i happened to chance upon this yummy looking carrot dates cake… I quietly put it in our shopping cart without asking my hubby {who was on dieting! Wait, actually both of us were!! Yes “were” ;)}.. After we reached home, i started gobbling these yummy, moist and super delicious cake slices and looking at my expressions, my hubby dumped all his dieting plans and grabbed a slice… Finally when the cake got over and we really wanted more of it, my hubby suggested {Actually ordered!} that i try it at home.. Whaaaaattttttt??

After that, every day he would ask if i had searched for the recipe and me, being such a lazy creature would say “No”… Finally after many days when i was tired saying “No” and i realized He would never get tired of asking, i searched for carrot dates cake recipe… But see my luck… I got carrot cake recipes and dates cake recipes but did not get a recipe which combined both… Finally i happened to see a recipe of  Dates cake by a friend of mine who is an expert in cakes, Jayashri Baleri… I thought of modifying her perfect recipe by adding carrots and cashews to it and thus suiting my hubby’s demands… 😉

As i entered the kitchen, i could hear a conversation between my new loaf pan and my cake tin…Felt really bad for the loaf pan and decided to inaugurate it for today’s cake.. 🙂

And Jayashri’s perfect recipe + my new loaf pan worked magic!! I saw the cake rise beautifully and turn into a yummy , moist cake.. We really enjoyed this home made treat… And my hubby?? He has started asking me when i am making them again….. Ohhh… Is there ever a end?? Hope not!! Loved baking this one.. Hope you bake and love this yummy treat too…. Happy and Healthy Cooking!! 🙂

RECIPE:

Ingredients:
18 – 20 Dates
3/4 Cup Milk
1/2 Cup grated Carrots
1/2 Cup Sugar
1/2 cup Oil {Canola/ Olive/ Sunflower}
8 – 10 Cashews , finely chopped

Dry ingredients to be sifted:
1 Cup Whole wheat Flour
1 tsp Baking soda

Recipe:
1. Soak dates in warm milk overnight or for 5-6 hours..

2. Remove seeds from the dates and grind with little of the soaking milk to a smooth paste… Pour it onto a bowl..
Note: Use the rest of the milk to clean the mixer and remove the paste from it..

3. Add oil and sugar and whisk till the sugar melts….

4. Add grated carrots and cashews and mix well..

5. Preheat the oven at 180 C for 10 mins…
6. Sift the flour and baking soda at least thrice…

7. Add this sifted flour mixture to the wet mixture , a Tbsp at a time mixing well to remove any lumps..
Note: Do NOT over mix/whisk.. Just mix till the flour is well incorporated in the wet mixture..

8. Pour this mixture onto a greased cake tin and spread the mixture evenly in it.. I have used a Loaf pan here..

9. Bake at 180 C for 35 – 40 mins or till a toothpick inserted in the center comes out clean..

10. Allow it to cool… Invert it onto a plate and remove the parchment paper..

11. Cut into slices and serve warm…

I always get doubts on baking like “Why my cake did not cook in the center?”, “Why the cake did not rise?”, etc… Even though i am not very much experienced in baking, i would like to share some tips to get that perfect bake on basis of what i know..
1. First of all make sure you have got a Conventional Oven or a Microwave with conventional mode in it..
2. Make sure you have preheated the oven before keeping the cake tin in it.. Preheating means just heating the oven without anything inside for 10 mins usually at 180 C..
3. Check for the expiry date on ingredients like Baking soda, Baking Powder, Yeast, etc as bad quality or expired ingredients can spoil your bake..
4. Sifting is a very important step as it makes sure the soda is well mixed in the flour..
5. Baking with whole wheat flour gives you a little denser texture but it is definitely a healthier option when compared to refined flour…
6. Now the MOST important one, never open the oven door in between the baking time to check as this may lead to a complete flop bake…. Wait for example at least 30 mins if the baking time mentioned in the recipe is 35 mins for the tooth pick check and never open the door before it…..
7. Lining the cake tin with Parchment paper helps to give a neat finish and takes care that the cake does not stick to the bottom of the pan..
8. And lastly, allow the cake to cool completely before you invert it…
