Eggless Apple Cake {Whole Wheat & Sugarless}

Yipeee!! A Healthy Bake again… I see a lot of cake recipes online but can’t seem to find ones without APF and without sugar and eggless… That keeps me away from baking cakes.. Though I have baked cakes and muffins using whole wheat flour, eggless & sugarless, I always wanted to experiment with variations in them… I had seen a healthy one using bananas and Finger millet flour made by my friend but whenever I buy bananas for it and allow it to ripen properly, we often gobble it up before it reaches that stage {Foodie us!}..

                     So how did this eggless apple cake idea come up?? Ahh.. That’s one long story.. Actually there were a couple of apples leftover and my hubby was adamant that he would not have it as such and he will ONLY eat Apple Cake.. I was like Apple cake?? From where do you get such ideas? I will make custard for you adding all fruits.. Healthy also..{Actually trying hard to convince him for a easier and lazier option… Lol!}.. But No…. He was just stuck with his apple cake and i went off to fold the clothes hoping that by the time i come back, he would have dropped the idea or better still, forgotten about it.. and mind you! It was 8 at night… That’s the time we always relax right? [Btw is there a time i don’t like to relax..Never mind.. 😉 ]

As i came back, he looked super excited.. I thought must be the match he was watching.. But guess what he was doing for the past 30 mins.. He was actually google searching for eggless apple cakes and had actually found some recipes.. That was really sweet of him.. I finally gave in {smitten with love} and started checking out the ones he had found.. I was totally impressed!!! The recipe was super good and unbelievable kind with all healthy ingredients except refined flour.. But i knew i just had to substitute wheat flour for that… So everything settled.. *Hubby Happy, Me Super Happy*

Since it was HIS recipe {after all he had found it}, he sat down to dice the apples, grate the jaggery and even powdered the cinnamon and cloves as i was busy clicking pics of the ingredients..

Even as the apple mixture was boiling, the whole house smelled Fabulous!! My hubby {who was back to his cricket match} came running asking if the cake was done.. I was like have patience… It has to cool and then mixed with flour and then baked for half an hour…. {But we still had a little lick of the apple sauce and it was simply yummmm….}

So finally with loads of patience, when the cake came out of the oven {ahhhh…. the aroma….. } we had a happy dance on how perfectly it had come out… As i was clicking pics, was still doubtful of the taste… As i cut the cake and we had our first bite, OMG!! It was too good… The cake was moist, filled with apples and raisins with the natural sweetness of honey and jaggery and super soft too which is not expected of from cakes made with wheat flour.. The only fault {if you have time to find} is that the cake does not rise as much as a sponge cake… That is because it has fruits in it and is not made from refined flour.. But trust me when i say this, It still comes out soft and yummy….

So my friends, try out this delicious Eggless Apple Cake and i am sure you will love it very much.. I also want to thank my husband for finding out this wonderful recipe.. It was really sweet of you dear.. 🙂

Dry Ingredients to be mixed:
1 1/2 Cups Whole Wheat Flour
1 tsp Baking Soda

Wet Ingredients to be mixed:
2 Cups Peeled & Diced Apples
1 Cup Golden Raisins
1 Cup Unsweetened Apple Juice { + 1/4 Cup if required}
1/4 Cup Honey
1/2 Cup Jaggery
1/2 Stick Butter {1/2 stick = 50g = 3 Tbsp}
1 tsp Salt
Powder of 3 cloves + 1/2 inch Cinnamon Piece

1. Mix all the wet ingredients in a large saucepan and bring it to boil.. Keep on boiling for 8 mins..

2. Reduce flame to medium and simmer uncovered for 5 mins…

3. Remove from flame and allow to cool completely..
4. Sieve the wheat flour and baking soda together in a large bowl..

5. Fold in the apple mixture..
Note: At this point, i added 1/4 Cup Apple juice to bring the batter to desired consistency..

6. Preheat the oven at 180 C for 10 mins..
7. Line the baking dish with parchment and grease the inside with little butter/oil…

8. Pour the mixture into the dish and spread it evenly..

9. Bake at 350 F / 180 C for 30-35 mins till a toothpick inserted in the center comes out clean.. Allow it to cool completely..

10. Remove it onto a serving dish, decorate with cherries, cut into slices and serve..
