Easy Eggless Microwave Plum Cake | Using Wheat Flour

I am on a Baking or rather Caking Spree!!! The cakes and cookies i see daily all thanks to the beautiful season of Christmas are just forcing me to bake some goodies myself… It was just last week i baked this beautiful Eggless Apple Cake and here i am with the cake of the season – Plum Cake! This yummy cake has been my favorite since childhood and when i chanced upon a recipe where it was made eggless and in a microwave within 5 mins, i just jumped with excitement…. Can it be easier??!!

Back to my cake, i was actually scared to try this recipe as it sounded impossibly easy but me and my experiments…. So even though with no great hopes, I mixed,microwaved, inverted the cake anddddd i was in for a pleasant surprise!! Just look at the cake…. So very moist,well risen,spongy and super delicious too… This is by far the best cake i have made….

And before i forget, all this sponginess is with wheat flour…. Who says cakes with wheat does not turn good.. Give it a try and you will stop using refined flour… I just loved this plum cake.. RECIPE: {Makes two small cakes..}

Dry Ingredients:
1 1/4 Cup Whole Wheat Flour
3 Tbsp Cocoa Powder
1/2 tsp Baking Soda

Wet Ingredients:
3/4 Cup roughly chopped Mixed Dry Fruits and Nuts { I added Tutti Fruity,Cherries, Cashews, Walnuts and Pistachios}
1/2 Cup Water {Heated in microwave or pan..}
1/2 Cup Sugar
1/4 Cup Oil
1/4 Cup Honey {Dates Syrup or Molasses can be used too}

1. Add the chopped dry fruits and nuts into the hot water.. Allow it to stay immersed for around 5 mins..

2. Meanwhile sift the wheat flour, cocoa powder and baking soda in another bowl.. Keep aside..

3. Add sugar, oil and honey to the dry fruit mixture.. Mix well..

4. Add the sifted flour mixture to this and mix well to remove any lumps..

5. Grease a microwave safe bowl and pour the batter into it… Fill only half of the bowl as the cake rises well..
Note: Pour the remaining batter into another greased microwave safe bowl..

6. Microwave on high for 3 mins..
Note: If the power of your microwave is less it might take 4 to 5 mins as per the original recipe.. Mine was done in 3 mins..

7. Insert a toothpick in the center of the cake to see if it comes out clean… If it does not microwave for a min more or till done..

8. Allow it to cool down to room temperature..
9. Refrigerate it for an hour so that the cake holds well..
10.Loosen the edges of the cake using a knife and invert it onto a plate..

Cut into wedges and Serve…. Enjoy the festive season of Christmas with this easy plum cake!!

Note: Leftovers can be refrigerated in an airtight container.. It will become slightly hard but keep it at room temperature for some time and it will turn soft & spongy again…. 🙂
