Easy Eggless Brownie | Using Wheat flour and Jaggery


                                            I am sure all of you must have visited the blog, Veg Recipes of India someday or the other in search of recipes. Run by a talented lady Dassana Amit, this blog is my online recipe book. Whenever I am in need of a new recipe, my first search would be on her site. Not only are her recipes perfect, the step by step pictures attached make them more easy to understand. 

                                          So last week when I planned to make brownies for my friend Renu’s kid who loves chocolate, my first referral site was of course Dassana’s blog. The recipe was quick, had all ingredients available in my pantry and was healthy too using wheat flour. It did not take me much time to bake the brownie. Soon the house was filled with chocolaty aroma. 

                                          Though I had made them for Ishu, how could my taste tester hubby not get a bite of it. And now we have one more. Miss A loves to taste anything and everything her mom makes. But this time they were not going to just “taste” it. The whole set of brownies baked were on the verge of extinction (haha!). Both of them just loved it like anything. I had to hide a couple of them for Ishu. 
                                            Finally when Ishu loved it as well, I thought of blogging this recipe. My hubby gave this idea of using Jaggery instead of sugar and they came out really good too. We could not tell the difference between the jaggery brownie and the sugar one. 

                                    Since Miss A loved them, I added ghee instead of oil and that enhanced the flavors. She was behind me for more “cake” (as she calls it!) and seeing her relish them made me really happy. These brownies are a perfect example of taste plus health. Though as an occasional treat, they are far better than store bought ones with the use of wheat flour, jaggery and ghee. So enjoy making them and see your family devouring them. RECIPE:

Adapted fromVeg recipes of India

Ingredients: {Makes about 8 medium Brownie squares}

  • Dry Ingredients:
    1/2 Cup Wheat flour/ Atta (I used Shakti bhog Atta)
    1/2 tsp Baking Powder
    A pinch of Salt
  • Wet Ingredients:
    1 Cup Water
    1/3 Cup Jaggery*
    1/3 Cup Unsweetened Cocoa Powder
    4 Tbsp Ghee*
    1/2 tsp Vanilla Essence

2 Tbsp Hot water if needed

*Jaggery can be substituted with brown or regular sugar and Ghee can be substituted with neutral oils like Sunflower or Canola Oils.

Recipe:
1. Sieve together wheat flour, baking powder and salt. Keep aside. Preheat the oven to 180 C for 10 minutes.

2. Heat 1 Cup water and melt Jaggery in it. Sieve the liquid and boil it again.

3. Lower the flame and add cocoa powder and ghee.Whisk well.

4. Bring the mixture to a boil and remove from flame.

5. Slowly add the wheat flour mixture along with vanilla essence to this and keep mixing with a whisk until the two are well mixed.
Note: At this point check if the mixture is too thick. The mixture should resemble halwa texture and should be spreadable. If not, add 2 Tbsp of hot water to this and whisk again.

6. Now pour the mixture to a baking pan lined with parchment paper or greased well. Spread using a spoon or spatula.

7. Bake at 180 C for 30 to 35 mins. Mine took exactly 30 mins both times I made.
Note: Never open the door before at least 25 mins into the baking time.
8. Remove and check by pricking a toothpick in the center. It should come out clean. Allow it to cool.

9. Invert onto a serving plate and remove the paper carefully.

10. Cut into squares and serve.

Note: Tastes best when warm. So microwave a bit before serving if eating later. Refrigerate the remaining pieces.

    After 30 minutes, the cake was cooked, it was delicious but very sticky.
    And I did not see the use of ghee/oil in the recipe.
    Can you help?

    • Hello Mega, It has 4 Tbsp Ghee in the recipe. I think you missed out on that. Please check again. That might be the reason your cake came out sticky. Also hope you are using measuring cups for measuring ingredients. Proper ratio of ingredients are very necessary for any cake to come out perfect.
