I just love corn! The aroma of steaming corn is so fragrant it leaves me craving for it even if my stomach is full (My husband has to literally pull me away from the stalls in shopping malls!)… At home, i usually buy fresh ones, steam it and have it seasoned with salt and pepper… Its a wonderful evening snack and very filling too..
I mostly plan my meals for next day according to the veggies i have.. But there are some days when i forget to plan and end up thinking what to prepare.. This was one such day.. As we were planning to go out for the night, i had to prepare only for the lunch.. These are the most difficult times.. After a lot of discussion and hundreds of options later, i finally decided to try this yummy looking corn pulao from my favorite blog Raks Kitchen… And i must say, i wasn’t disappointed at all.. It was so yummy that i wished i had made more…
This dish is very easy to make,healthy and very tasty…. Hope you will try it too and love it like i did!

1 Cup Rice
1/4 Cup Corn kernels
Around 8-10 Mint Leaves/Pudina
1/4 Cup Coriander Leaves
1/2 Tbsp Oil
1 Bay Leaf
2 pods of Cardamom/Elaichi
2 Green Chillies
Salt to taste
For Grinding to paste:
3 cloves of Garlic
1 inch piece of Ginger
2 tsp peppercorns
1 small piece of Cinnamon stick
5 – 6 Cashews
1.Wash rice well and soak it in enough water till ready to use..
2. Take all the ingredients for grinding and blend it into a smooth paste..
3.Heat a pressure cooker with the oil and add the bay leaf and cardamom pods..
4.Add the slit green chillies and fry..
5.Add the paste and fry till the raw smell goes..
6.Add the mint leaves and mix well…
7.Add the coriander leaves and mix well…
Note: Please keep stirring to ensure the mixture is not sticking in the bottom.. You can also add some water if so..
8.Add corn kernels and rice and mix well… Add water till it covers the rice completely..Add salt and mix well..
9.Pressure cook for 4 whistles or till how long you normally cook your rice dishes.. Let the whistle go down on itself..
Serve hot with raitha or curry of your choice…Enjoy!
