Chutney Sandwich | A Dedication to Amma


                                             This recipe was supposed to be my Mom’s b day gift {It was on 19th} but all thanks to my forgetfulness in buying the main ingredient, Coriander leaves, could not make it then.. *Sob* Anyhow Mom enjoyed her B day really well this time with dad and my bro treating her big time with her favorite goodies.. She was also happy that many of her friends wished her and finally here i am with my little “Blog wish” posting a recipe of hers i love the most.. This one is dedicated to you, Amma!

                                            Chutney Sandwich was one of those breakfast items which i used to wait for the most.. Mom made it usually on Thursdays.. {Yes, we had a time table breakfast.. Mon, Wed, Fri were Dosa days, Tue was a Puri-Bhaji day *yum* and weekend was dedicated to Upma,Poha,etc..} Even though the sandwich is just a chutney between two toasted breads, when she makes it, you can’t stop with one.. My hubby who was not at all a bread lover fell for this when she had packed us some for a train brunch during our last vacation.. I was so glad he loved it and since then, you know what i make when i have bread and coriander leaves together in stock.. 😉 

This recipe is the simplest and gets done in few minutes… And do i need to say how healthy it is with all the fresh ingredients.. A must try recipe! Go now into your kitchen and make some sandwiches.. Do remember my mom and me as you munch them.. 😉 Happy and Healthy Cooking!!

RECIPE:

Ingredients: {Makes 5 Sandwiches}
10 Brown Bread slices
1 Cucumber, thinly sliced
1 Tomato, thinly sliced
1 Cheese slice (Can be increased to two or optional)
Butter/Ghee/Oil as required to pan fry the bread

For the Chutney: [This recipe is available in the Jaya V Shenoy cookbook]
8- 10 sprigs of Coriander leaves, roughly chopped
8-10 Mint leaves/ Pudina
3 Green chillies
1 small sized Onion, roughly chopped
3 cloves of Garlic
1/2 inch Ginger piece
1 Tbsp freshly grated Coconut
1 Tbsp Jaggery/ Sugar
Salt to taste
1 Tbsp Lemon juice {raw mango or tamarind can also be added instead while grinding}

Recipe:
1. Throw in coriander leaves, mint leaves,onion,ginger,garlic,green chillies and coconut in a mixer..
Note: If adding raw mango or tamarind instead of lemon juice, add now..

2. Grind it to a coarse paste without adding water.. Now add jaggery and salt along with just a tsp of water and grind to a smooth paste..

3. Add lemon juice.. Do a taste test now to find if it requires more salt, jaggery or lemon..

4. Cut the cheese slices into fine pieces and add to the chutney… Mix well..

5. Heat a pan and apply butter/ghee/oil on it.. Place a slice of bread and spread around 1 Tbsp of the chutney evenly over it.. Place cucumber and tomato slices too..

6. Now keep one more bread slice on top and apply little butter over it.. Flip and cook till both the sides are browned..

7. Remove from flame and serve with tomato ketchup or on its own..
Enjoy Chutney Sandwich as a filling breakfast or a yummy snack option!

Notes:
1. My mom makes this sandwich just with the chutney and no cheese or veggies.. Still tastes yum!
2. Pan frying is optional but since i have grown up eating that way, just can’t imagine this sandwich without the toasted bread..
3. Cheese can be placed along with veggies as individual slices too but adding to the chutney {Idea by my bro-in-law} gives it a special flavor..
4. This chutney can be used as an accompaniment to Indian street foods like Samosas or as a spicy-tangy dip…
