Chocolate Dates Fudge | Sugar free

                                       This delicious dates fudge is dedicated to my dearest hubby (d galore!) who keeps encouraging me to blog and keeps the blogger in me alive.. Some of my friends tease that he encourages me so that he gets to eat special delicacies.. haha.. True that! We both get to eat yummy and healthy treats homemade and that’s the advantage of being a food blogger.. But even without the blog, I love to cook.. My mom would smile reading this as prior marriage, the love was only for eating ;).. 

                                       Marrying a foodie husband definitely brings out the chef in you (Can see many heads nodding!) and the same happened with me.. The best part about him is that he is very straight forward about his food reviews.. If he likes it, he says it and if he does not like it, he gives me tips on how to make the dish better.. Awesome, right? That’s how my cooking got improved and is still improving everyday.. 
                                        One such idea he suggested was for this recipe.. I had bought some dates to make the regular date rolls.. He suggested that adding chocolate might make it taste even better.. As usual, I was slightly apprehensive but went ahead with his recipe idea.. And I am happy to say that he was right! This chocolate dates fudge tastes so delicious and is much better than date rolls.. 

                                        We loved it very much and this fudge is the best way to include dried fruits in your diet.. Also being sugar free, you can enjoy without any guilt.. Chocolate lovers, this is also for you.. So what are you waiting for? Try it and enjoy!!

Health Benefits of Dates: Rich in vitamins, minerals and fiber, consuming them in adequate amounts provides relief from Constipation, Intestinal disorders, Heart problems, Anemia,  Sexual dysfunction, Diarrhea and Abdominal cancer.. 


Ingredients:   Makes around 8 fudge balls
2 Cups Dates {Soft dates work best!}
1/2 Cup Nuts {I used a mix of Cashews, Pistachios, Walnuts and Almonds}
2 Tbsp Cocoa Powder
A pinch of Salt
1 Tbsp Butter

1. Dry roast the nuts for few minutes on low flame till they slightly change colour.. Keep aside to cool..

2. Remove seed from dates..

3. Coarsely powder the nuts in a dry mixer grinder..

4. Add salt, cocoa powder and dates..

5. Blend to a smooth paste..
Note: You can also add just a Tbsp or two of warm water if the dates are not blending well.. Don’t add more water as the mixture can turn gooey..

6. Heat butter in a non stick pan and add the mixture..

7. Stir on medium flame for about 5 mins till the mixture forms a even mass as shown below..
Note: This mixture tastes slightly bitter due to the raw cocoa powder.. Freeze it and it turns yum..

8. Allow it to cool.. Wrap in a foil/ parchment paper / in a air tight container and keep in fridge overnight or a minimum of 4 hours..

9. Make balls and shape as you desire..

Keep refrigerated till you finish them off!

* Don’t use more cocoa powder than mentioned as the mixture can turn bitter..
* You can also skip adding cocoa powder and make normal date fudge..
* This fudge turns out soft.. If you want a firm fudge, increase the amount of nuts to 1 Cup..
