Carrot Rava Ladoo


                           An year already passed by so quickly… Wow! 2013 was a life changing year for me starting with a changeover from “unhealthy living” to an effort to live life healthier… And i must say my efforts never went futile.. With each shedding kilo, i was encouraged more and more.. Then in May, “Healthy Cooking with Mitha” came into being, All Thanks to the idea of my dear ones and especially my aunt Anita Pai who has been a friend, guide, support and most importantly a good critic.. The little i came to know about photography and clicks were solely because of her.. I would also like to thank all my readers who have made me overwhelm each time with your support…. Thank you All!! 🙂

                        Now with the thanksgiving speech done, i can finally talk about my fav subject, Food! This yummy looking ladoo was in my wishlist since long but cakes were taking up all my time {All thanks to Christmas season!}… So when my hubby asked, what recipe are you adding to your blog for New Year, i did not think twice.. Carrot Rava Ladoo it was!!

                       This recipe is my first attempt in “Ladoo Making”{many more waiting…} and was a super successful one {Tooo glad to be true}…. I really can’t believe ladoo making is so easy… It was done in like within half an hour and finished off within 15 mins.. haha… We really loved it a lott.. I thank my friend Vidya Nayak Shenoy for her wonderful recipe!!

                       The ladoo has a real melt-in-the-mouth texture with the juicy carrots in it and also the little bites into the cashews and raisins make it a heavenly treat for the ones like us who have an extra sweet tooth…. So my friends, if you have still not decided what to make for this new year, try this one for sure… Won’t take much of your time and won’t disappoint you for sure… Enjoy! RECIPE:

Ingredients:
1 Cup Semolina/Rava/Sooji
1 Carrot {finely grated} *can be replaced with beetroot as well..
1/4 Cup Milk
1/3 Cup Sugar
3 Tbsp Ghee / {1 Tbsp Oil + 2 Tbsp Butter}
10-12 Cashews and Raisins
2 Tbsp Grated Coconut
1/2 tsp Cardamom powder

Recipe:
1. Heat ghee {or oil+butter} in a heavy bottomed pan and fry the cashews and raisins on a slow flame till raisins puff up and cashews turn golden brown.. Remove and keep it aside..

2. Fry the grated coconut till slightly brown..Remove and keep it aside..

3. Add grated carrot and fry till all the water evaporates.. Remove and keep it aside.

4. Add semolina and fry till the color changes very lightly and you get a nice aroma…

5. Add sugar and continue to cook on a very slow flame for 2 mins..

6. Add milk and mix well, stirring continuously for 2 mins till the sugar melts and the semolina gets cooked..

7. Remove the pan off the flame and transfer the contents to a wide bowl.. Allow the mixture to cool slightly until warm enough to be handled…

8. Mix in the roasted raisins,cashews and the grated carrot adding cardamom powder..

9. Form lime sized balls by compressing the mixture in your palm into a tight fist..
10.Place them on a plate.. They will be soft initially but will harden as they cool..
