Broken Wheat Dosa | Dalia Dosa

  

                                      Dosas and more dosas!! Are you getting bored?? I’m not! I can never get bored of trying {and gobbling} different varieties of them and so does my hubby… In fact he’s the one always pestering me to find out new dosa recipes {For the blog,of course! ;)}… Btw Sweet and Spongy Surnali was my 25th dosa recipe… Just realized it when a reader left this comment on my Dosa Corner! page right before i posted the surnali recipe.. The very mention of Dosa, makes me drool. I am over the moon, to have seen 24 different recipes on your site. Thank you so much. I have subscribed by email and book marked for future reference. Mixed lentils and Instant Oats are going to be on my cooking menu soon.”

                                                 When i shared this news with my mom, she was like “Oh.. Great! Will be very helpful for dosa lovers as they have got a new recipe to try everyday..” and as i told my hubby about this he was like “25 is not enough! 50 sounds great!”… haha… he and his different ways to keep me going… That made me instantly google search to find new dosa recipes and i felt as if i was at a potluck party.. I found out 5 new dosa varieties and 2 idlis out of which i have already tried 3 recipes and all 3 were a hit!! 🙂

                                     So here is the one i tried first, Broken Wheat dosa.. I had this packet of broken suchi wheat pleading to be used and this recipe proved perfect for it.. The dosas came out very soft and tasty & i loved the pores on it.. They looked so pretty!! Have a look… 🙂

Even though i also want to try different variations in chutneys, my hubby is always adamant on Hing Chutney as he says it tastes great with any dosa {and secretly i don’t mind too as it is very easy and my favorite!}… So here is a new dosa recipe for you to try and enjoy… Happy and Healthy Cooking!!

Health Benefits of Broken Wheat: Made from crushing whole wheat berries, the nutrition and fiber is intact and hence very healthy… Good source of Iron , Magnesium and Phosphorus and higher glycemic index and nutritional value than rice..

RECIPE: {Makes around 20 medium sized dosas)

Ingredients:
3 Cups Broken Wheat/ Dalia/ Gonva Khan {I used the Nirapara brand of broken suchi wheat}
1 Cup Urad Dal/ Skinned split black gram
1 Cup Rice
1 tsp Fenugreek seeds/ Methi
Salt to taste

Oil for cooking the dosa

Recipe:
1. Wash well and soak the urad dal along with fenugreek seeds in little water for 4 hours..

2. Wash well and soak the broken wheat along with rice for around 4 hours..

3. Grind the urad dal mixture with little of the soaking water to a smooth paste.. Pour into a bowl..

4. Grind the broken wheat-rice mixture with little water to a smooth paste..
5. Pour it into the bowl..

6. Add salt and mix both the batters well with hands..

7. Keep it in a warm place for 8 hours or overnight for fermentation…

8. While making dosas, heat a pan and reduce the flame to medium..
9. Pour a ladle of batter in the center of the pan… Just tilt the pan to give the round shape..
Note: My batter was slightly thinner than regular dosa batter consistency.. That is why i did not spread the dosas with the back of the ladle.. If yours comes out dosa batter consistency, spread them like regular dosas..

10. Cover and cook for few seconds till the top surface looks cooked..

11. Pour a few drops of oil on the sides of the dosa.. Slowly remove the dosa from the sides and moving towards the center.. Flip and cook the dosa for few seconds..

12. Remove from pan..
Serve hot with a chutney of your choice or Sambar!
Note: Refrigerate the remaining batter.. Keep the batter at room temperature for at least 30 mins before making dosas..
