No matter how hard we try, we can never recreate the taste of our moms food…I guess that is what is called the “magic of hands” and the generous amount of love she puts in while preparing something..I have had my favorites in what mom used to prepare at home..Upma, puri bhaji,shevai usli,sheera,batat bath,pulav and the list goes on and on……yum! my mouth is watering.. Even though i make all this in my kitchen, i always end up craving for her food as i can never make it like her..
I am also a big fan of underground veggies…Potatoes, carrots,beetroots,yam,chinese potato,sweet ones,u name it and they are my fav! I always add them in most of the curries i make.. With beetroots,even though i make stir fry,kurma,cutlet and salads, my moms beetroot chutney tops the chart! It is tangy,sweet,spicy easy to make healthy chutney..A meal with rice,rasam and beetroot chutney is a wow meal for me! Do try it for a change and i am sure you will fall in love with it…

3 medium Beetroots
1 small piece Tamarind
1 inch piece Jaggery
3 to 4 Red Chillies
2 tsp coriander seeds
1 tsp urad dal
Salt to taste
2 tsp oil
2 tsp mustard seeds
Curry leaves to taste
1.Wash and peel the beetroots and chop them into small chunks.. Boil them along with tamarind and jaggery till soft.. (I pressure cook them for 2 whistles)
2.Meanwhile,fry the coriander seeds and red chillies in little oil till they turn slightly darker..
3.Cool and blend it with some water in a mixer..
4.Fry urad dal in the same pan and add to the mixer.. Blend them together for some seconds..
5.Remove the paste in a bowl..
6.Cool the boiled beetroots.
7.Blend it with salt till it turns into a puree..
Note: You can leave small pieces of beetroot in it for extra flavor..
8. Mix the beetroot puree with the above blended paste..
9.Prepare seasoning with mustard seeds and curry leaves..
10.Pour over the chutney… Enjoy with rice, rotis, idlis or dosas!
