You may wonder what a big name for the curry..Actually i was not sure what the name of this curry should be as this is somewhere between paneer butter masala (with no butter of course!) and Babycorn capsicum masala (with paneer!)..So atlast decided to combine these two and name it this way..
This recipe is by my dear husband who used to make this as a surprise treat for me when i returned tired from work..Although he never told me how he made it initially (His lil secret!), after loads of pestering from my side (I am very good at it!), he finally let me into the recipe.. And wow! I was amazed..So easy to make and not many steps of grinding which is common in paneer recipes…I have now also tried the same with mushrooms and they taste equally awesome..
So this time when i had some babycorn, decided to try the same gravy with it..Added some capsicum for extra crunch, some paneer to make it filling (as a treat too!) and there it became a wonderful curry…

6-8 Baby Corns
1 Cup Paneer/Cottage cheese cubes
1 tsp Red Chilli Powder/ to taste (as we are adding green chillies in the paste)
1//2 tsp Turmeric Powder/Haldi
1/2 Tbsp Garam Masala Powder
1 tsp Cumin seeds/Jeera
1/2 + 1/2 Tbsp Oil
3 Tbsp Milk
Salt to taste
Coriander leaves for garnish
3 cloves of Garlic
1 inch piece of Ginger
2 Green Chillies
1. Grind tomato,onion,ginger,garlic and green chillies into a smooth paste..
2.Heat 1/2 Tbsp Oil in a pan and add the cumin seeds..After they splutter,add capsicum aand keep frying till they are half cooked.. Keep it aside..
3.Heat the rest 1/2 Tbsp oil and the ground paste in it and add the turmeric,red chilli and garam masala powders.. Keep frying till the oil leaves the sides..
4.Add babycorn and salt and mix well.. Cover and cook for 5 minutes..
5.When the babycorn is cooked, add the capsicum and paneer and mix well…
6. Add milk and allow it to come to a boil..
7.Remove from flame and garnish with coriander leaves..
Serve hot with rotis or rice!
