Amla ki Launji | Instant Gooseberry Pickle

                                                        Although i speak a lot about my hubby, mom, bro and many other people close to me, i seldom speak about my dad.. Not because nothing relating food happens with him… He is definitely a great foodie! If i have tasted varieties in my food menu as a child and teenager, it is because of him.. Mitha was his permanent companion {literally a tail! :D} when he went to his friends’ weddings or any other function for my craze to socialize {& to gobble the feast!}..
                                                        Though he loved eating, cooking was something that he did not do often (as my mom was strict against her pots catching fire.. :D).. But one special item he does makes the best are Pickles!! He truly has great patience to finely chop mangoes, garlic and what not and keeps experimenting with the spices to bring out a finger licking pickle every time.. On Father’s day today, this instant Gooseberry pickle is dedicated to him..

                                                         I found this super easy pickle from the TD site while hunting for Amla recipes.. The shopaholic in me had grabbed tonnes of gooseberries from the supermarket as they were really fresh but as they started wilting, the recipe hunt time was reduced to a day.. After going through few recipes containing sugar, this one was like a savior.. Quick to make, super healthy and an amazing shelf life.. Was so glad i could save my Amlas!

                                                        So if you want to “save” your gooseberries too or just need a daily dose of Vitamin C in a spicy-sour style, do try this Launji.. Happy and Healthy Cooking!!

Amla Chutney is another hit recipe with this healthy berry you would love for sure!



Ingredients: {Makes approx 1 1/2 Cups of Launji}
18-20 Amla/ Gooseberries/ Avalo/ Nellika
2 Tbsp Oil
1 tsp Mustard seeds
1 tsp Fennel seeds/ Saunf
1/4 tsp Asafoetida/ Hing
2 dry Red Chillies
1/2 Tbsp Red chilli powder
2 tsp Coriander powder
1/2 tsp Turmeric Powder
1 tsp Jaggery
Salt to taste

1. Wash the gooseberries well and boil in hot water for 5 mins or till they turn soft {insert a knife to check!} and change colour to pale green..

2. Drain and allow them to cool..

3. Now slice them into segments using a knife and remove the seeds..

4. Heat oil in a pan and splutter mustard seeds.. Now add fennel seeds, hing and red chillies.. Fry till the chillies change colour..

5. Add the gooseberry segments and mix well..

6. Now add red chilli, coriander and turmeric powder and mix well..

7. Add jaggery and salt along with a tsp or so of water.. Mix well..

8. Cover and cook on medium flame for 5 minutes..

Serve with a rice and dal or Kadhi combo!

Note: Stays good for at least a week when stored in an airtight container and refrigerated.. {Mine got finished off clean much before!}
