Amaranth Dry Curry [Bhajji Sukke]

I was never a “Leafy Vegetable” fan unless it was something as yummy as the alu methi or the super delicious palak paneer…But both these dishes somehow don’t come under my list of favorites when i am on a weight loss program.. So then, to be honest, i never included these leafy things in my diet till some months ago… The change occurred when i had a recent visit to India to my mothers place in kochi, Kerala.. We had this expert cook as a neighbor who would give us her yummy preparations which were so tasty that we would literally have a fight for it…One day she gave me this dry curry made from red amaranth or thambdi bhajji which was one of the important veggies in my hate list.. Even though i decided not to eat it, the colour and the smell of the dish was so appealing, i decided to have a taste test…and the result was….. I finished the whole bowl!! 🙂 It was so so yummy….

Then, after some days we requested her to prepare the curry for us at our home.. She had already instructed us to cut the amaranth very finely…I was waiting eagerly for her to come… She came hurriedly, prepared the curry in 5 mins… and left…Can you imagine?? 5 mins…Thats all!! and that too with only 5 to 6 simple ingredients…Wow!! I was amazed…

So, today i made this curry in my kitchen and i am sharing this recipe with all of you…All you leaf haters,please try this healthy recipe and you will become a forever fan of it….

RECIPE:

Ingredients:

1 bunch Red Amaranth/ Thamdi Bhajji/ Cheera
3 Tbsp Freshly Grated Coconut
1 tsp Turmeric Powder
Red Chilli Powder to taste
Salt to taste

For Seasoning:
1 to 2 Tbsp Oil
2 tsp Mustard seeds
Curry Leaves to taste

Recipe:

1.Wash and clean the amaranth leaves well and chop it finely… Chopping it finely will enhance the taste of this dish…
2.Take a heavy base pan or a kadhai and heat oil in it…Splutter the mustard seeds and add curry leaves…
3. Add the Amaranth leaves and salt.. Mix well maintaining high flame..Close the lid for 2 minutes..
4.Meantime, take the grated coconut in a bowl..Add the turmeric and red chilli powders….Mix well with hands..
5.Add this mixture to the curry…Mix well for a minute… Its done!! Enjoyy…

Note: 1.Do not add water at all…The leaves will release its own juices…
2.Do not overcook.. It wont taste good then and the nutrition factor will reduce..
